You need to try a Sheboygan (wisco) Bratwurst. Most people will boil the links in beer and onions until they turn a light gray before smoking them around 275 degrees until you get a nice char and smoke ring going. You want them to be charred with plenty of that smokey pink coming through. The true way to eat it would be two brats on a Sheboygan hard roll burger bun with ketchup mustard and onions (not too much because the brat is the star of the show). Although the hard roll would be difficult to find in Chicago I imagine.
I first had a butter burger at a fast food restaurant chain called steak n shake. It is a very buttery burger lol yours looks amazing and waaaay better

Joe can I ask you to make an Aussie burger for me mate, I’ve asked Guga, Sam, Chuddy, all the big names, as yet nothing, so legend can you please make for me and believe me this is a game changer, here’s what you need, lamb mince, caramelised onion, sliced grilled mushroom, pickles, grilled roasted peppers/capsicum, sliced beets and your fav burger sauce on a brioche bun, Swiss cheese, if you can’t get ground lamb, beef is fine. Just trimmed my brisket and kept my trimmings long so I can put it through the grinder. It really does help, especially with my little KitchenAid grinder attachment
