Taking a brief break from my deranking programme, I decided to make the most unhealthy food on the planet, a Fatty. It’s an American BBQ dish, but I made a British version with traditional sausage meat and Red Leicester Cheese.

RECIPE/INGREDIENTS:
500g Streaky Bacon
800g Sausage Meat
Meat Rub
180g Bacon Lardons
100g Red Leicester Cheese
BBQ Sauce
Charcoal
Two Chunks of Apple Wood
Cook around 130-135 degrees celsius for 2-2.5 hours
Brush with the BBQ sauce with half an hour to go
