The one and only star wasabi farmer, Josh, shows us how to prepare and grate Fresh Wasabi Rhizomes 

Hi Skiidzman, thanks for getting in touch and sorry for the delay replying. Yes, this is real wasabi and yes it is spicy! The interesting thing about real wasabi is that the heat comes when the rhizome is grated: you have to break down the cell walls of the wasabi in order to bring an enzyme that lives in these cell walls into contact with a compound inside the cell, when these two meet they react and create the flavour and pungency of real wasabi. It is very different from the "horseradish stuff" because the flavour is sweet rather than sour and the heat is more subtle as it builds, rising up through your sinuses and delivering the wasabi kick ;) Of course we recommend doing the taste test yourself and if you do, we would love to hear what you think!
