Sicily is home to a unique category of street food known as "rosticeria siciliana." In the local bars, a visitor is sure to find rows and rows of stuffed dumplings, fried calzones, mini pizzas, and even ricotta-filled desserts.
All of these treats are made with the exact same dough. In this video, Eva shows how to make this versatile dough and gives ideas for how to use it!

Omg , this orange Sicilian cake is another level. Never had I ever heard of using an entire orange , skin and all , I even messaged Eva about my doubt , but she so graciously responded and assured me. I tried it and it's by far the best tea cake I've had. Lovely crumb , subtle orange flavour and the gorgeous orange glaze .... I cannot thank enough , these 2 gorgeous souls for their effort and videos 😍 👏 ❤

I love when Harper says "Doesn't seem very Italian..." and Eva just replies "It's Sicilian" Only an Italian or a descendant of Italians can understand that. Love you EVA!!!

@@lenase7396 each of the regions were independent before the unification (or under other European monarchies), most regions have their own local language which are removed from Italian to a varying degree. Neapolitan and Sicilian are probably the most remote from standard Italian out of all of them to be honest, the modern Italian language is basically from Florence AFAIK which gained prominence in the peninsula during the Renaissance. Southern Italy is somewhat different than the rest of the country, in more ways than one...

I am so hungry looking at all those delicious ways you used the dough. I love all bread products and can never have a meal without Italian bread. I loved the sweet ricotta and chocolate chip one .Eva makes everything she cooks so easy and stress free. Love you both 💓

I'm from Catania, and I've eaten "tavola calda" (it is so called in Catania the Rosticceria Siciliana) last night. We've similar pieces like that and much more, and arancini are also considered tavola calda. Iris is one of the best breakfast sweet you can have, the pistachio version is simply incredible.

My family originates from Isola delle Femmine in Sicily. I love watching your videos, because so much of the dishes you prepare make me happy. Your recipes bring back many memories of Sicily and Italy for me. I regularly prepare the Italian/Sicilian foods I grew up with. but I’ve added several of your recipes to my menu. Another wonderful video!!! 🥰❤️❤️ On a side note, I was surprised to see the sponsor for this lovely video. Eva has helped me heal my eating disorder. I was on countless diets for 30 years. Like many of us dieters, I suffered from the diet/binge cycle. Diet culture and its trendy diets destroyed my relationship with food. Noon is one of them. It’s highly restrictive (1200 calories/day) and teaches us to judge our food based on colors. The most caloric foods are red while “safe foods” are green. That’s a terrible message. Mental health is as important as weight loss. Eva has inspired me to enjoy food without guilt, and little by little I am becoming an intuitive eater like her. Your channel deserves a better sponsor. You guys are too special and precious for that. Your message is healing people. I’m not sure how much you realize that. Love you!! ❤️❤️

"Intuitive" eating can be damaging as well. Balance and moderation in everything! If you can digest greens, eat lots of them. Eat lots of eggs, some cheese, some meat, but not too little and not too much, so it has to be proportionate to your size and metabolism.

After hours at our pizza shop we'd experiment with all the ingredients as long as they didn't look like a pizza. The manager gave out awards for the most creative stuff and off took most of them home. When pizza shops started to diversify into garlic knots, calzones, and savory filled donut none of us were surprised.

By a Palermitano which i am, congratulations not only for the detailed recipe, but also you've described and called with its proper names the "Pezzi". And above all for cooking the "Rollò" (Food that every kid loves in Palermo)

I'm so happy I found your channel! My grandmother recently passed and I tried to learn as many of her dishes as I could. She was from Northern Italy, Torino. So many lost recipes and so hard to find authentic Italian food where I live! I love your channel. Eva, my Nonna used to make a rice fritter with parsley I think and meats.. it was called fritchuling or something like that. Do you know this?

In England what you call a pig in blanket we call sausage roll. Our pigs in blankets are made by wrapping bacon around the sausage and baking it. Home Simpson would prefer ours I think - mmmm, Baacooon... saauuusaaageees ....

Oh that looks amazing. I will try to make this. Ava, my mom used to make salt cod (bacala) stuffed dough that she would fry and it was incredibly good. Would you make this in a future episode? Bacala is my favourite seafood. She would also make a baked bacala dish with white wine, bread crumbs, garlic, parsley, and white grapes. I love your videos ❤

Hi Eva and Harper! my parents were from Calabria, specifically Gioisa Ionica/ Marina. I visited there as a child twice and I remember a specific pastry that was incredibly delicious. I am a grad of The CIA in NY, 1984. The pastry is simply called Pasta di Gioisa. I can send u a picture. Looks like a simple pate choice or possible sponge with a pastry cream and icing topped off with a red or green cherry. Sounds simple but I’m sure there are a few delicate nuances that make it super delicious. Wondering if u could help! Grazie, love ur channel!!!!❤️❤️✌️

Has Eva ever tried stuffing them with Nduja? There was a Portuguese bakery in a local city near me that would make bread similar and stuff with chorizo, andouille or Linguica. So good! So since she grew up eating Nduja, I wondered if they would do the same? I know in videos you said it was hard to find decent Nduja in the US though to make it here.

In Glasgow we found an Italian restaurant run by a family from Italy, with a little deli/Italian store in it. They have Nduja! And gianciale and buffalo mozzarella. I would not eat Nduja because it is too spicy for me. But I was impressed that they had it!

Re: Italian-American food”chicken parmigiana”. The pasta is usually served on the side, if you want it. The entree usually has a green vegetable. Maybe Olive Garden, Carabbas, or Buca di Beppo serves the entree on pasta, but since I don’t eat at these places (I’d get thrown out of the Sons of Italy) I can’t speak from experience. Ciao

Lucca spelt bread "pane di farro" would be cool. I think it's spelt, maybe emmer. It's a unique and probably ancient anachronism. I've never seen it outside of Lucca.

@@1ACL Confusingly, farro in Italian can mean either emmer or spelt. If farro is sold for use as a whole grain, it is emmer. If ground it is usually spelt, I think. I'm still trying to figure it out. 🤔

Guys if you ever need an example to explain how things can have different names in different places were italian is spoken, just say "like pigs in blankets in English!" To someone speaking English in the UK or Ireland pigs in blankets are small link sausages wrapped in bacon and sausage in pastry is a sausage roll. wow Harper, you're a completely different person now, congrats. You look like you lost half your weight, and I know how that feels (went from 400lbs to 200lbs myself). I'm amazed that you haven't gained it all back with all that delicious food Eva keeps making for you. I know that I would never be able to maintain my weight if I married a cook as good as Eva

I don’t want to buy a stand mixer! It just takes so much space in a tiny Italian kitchen and is too big and heavy to bring out of the pantry each time needed. I can’t believe I’ll never be able to make this dough. I am crying. 😣
