@@mmoxiee as the video says, you need something milder than green onions, a calçot's flavour is something between that of a regular onion and a leek. The best "substitute" you could have in the US are Vidalia onions, but they aren't the right shape.
@@bubulunaidoo We really do. With salbitxada sauce we can eat it for days. Especially in Catalonia, I lived there for 9 years and it's basically a religion there

Spaniard here. I have always seen my family eat calçots, but I have never liked them (nor any other vegetable at all), but I really enjoyed cooking them, and I liked the sauce, which I put in toasted bread instead.
@@danielgyila3662 Yo es que soymuu especial con las verduras, tienen que ser textura de patata hervida o guisante como mucho, o frita como la cebolla (no caramelizada), no puedo con las texturas. El tema calçotades, yo soy de Ibiza, así que no hacemos una fiesta, pero sí nos juntamos la familia un fin de semana o dos en invierno/primavera.

In West Virginia, there is a festival that celebrates ramps (it is also called wild leeks). I visited the festival a couple of times and I love the food there! 🥰🥰
