I’m a medium rare/medium guy but I’m not one of those people who bash other for how they like to eat their food. Love the recipe I did everything you did except at medium rare
it’ll cool somewhat but this is okay - when you remove it from heat the edges of the steak are much hotter than the center, which causes the muscle on the outside to be relatively “tighter.” this both squeezes the juices out from the edges while cooking and drives the juices to the center of the steak. allowing the steak to rest for around 10 minutes will let the meat at the edges cool down towards the target internal temp (e.g., if you want your steak at 130°F the edges will cool towards that temperature), and the juices will redistribute towards the outside of the steak as the proteins loosen up from the resting.
At 4:34 my Uncle was moaning when you were cutting the steak, thanks to you, I'm being forced to go the store to get some steaks! And it's 37 degrees outside...lol
You folks are missing out if you’re not cooking it medium rare. Try it one time and you will notice the difference in the texture of the steak. If it is the redness of the steak that bothers you, try it one time but don’t look at it just eat it and you will notice a difference. I was a well-done or medium well done too until I tried medium rare. A total joy bomb. Holla at me after you try it.
it's not the best method but it’s possible. Ideally, steaks need to be prepared in a preheated, super-hot pan to get the right sear that locks in the juicy flavor. Since you like it will done you’ll fine
