Not really because if you are bending it at the same time it might warp the material you are cutting it from and you end up with oddball sizes so it makes more sense to cut them then shape them to ensure proper quality and less rejected peices.
The material had been heat treated before all the shaping and sharpening, that's why they sharpened them with water to keep them from over heating and ruining the heat treatment.

Completely overturning my perception, it's quite surprising to see manual methods being used in production in a technologically advanced country like Japan.
The title said Carving Knives, and as an American this means Kitchen Meat Knives, but what this is the production of Art Chisels ( smile ). The only reason these jobs exist is because the owners do not want to invest, or have the capital to robotize the entire production, and there maybe government Tax Breaks the owners receive for maintaining these workers. For good or for bad the American OSHA ( Occupational Safety and Health Administration ) organization would have this whole factory shut down in an afternoon.
@@altepost3805 You carve meat from the bone. That's why it's called the carving knife or sometimes boning knife. The Japanese term of carving knife would be Honesuki. The western wood carving knife is very different from these products in the video.
