Well friends, I was baking these muffins to take to an event and I ended up not taking them with me. A good number of my friends aren't concerned with health, so I knew these muffins would not be readily consumed. I've decided to freeze them for a time when I might want to "cheat" or something like a muffin.
I did modify this recipe by using rolled oats versus oat bran. I have a feeling that the results would fare the same. Instead of being more like the muffins you might purchase or bake using low-fiber ingredients, these muffins have a bit of weight and texture. Most of the time when we want to add breads into our diet, yet desire the important aspects of food, there is a tradeoff.
Should you proceed with this recipe, I recommend adding more cinnamon, nutmeg, and apples. It definitely needs more spice and flavor. You can also try boosting it with vanilla and perhaps a little Dolcedi's Low Glycemic Sweetener.
