The real Neapolitan Frittatine - Original and complete recipe 

Here is my recipe for Neapolitan pasta frittatine !!
Recipe for 20 Omelettes:
1kg of Pasta
1 and a half liters of milk
200g of flour 00 or rice
250g of butter
Neapolitan ragout
500g of minced meat
300g of peas
2 carrots
1 white onion or shallot
200g of smoked provola
Flour and water for the Pastella
