One ingredient has been a staple in sushi for over a thousand years-but it began in southeast Asia as a fish preservation method. Farmers would catch fish in rice paddies during the monsoon season. The caught fish were then pickled by salting the entire fish, packing it with cooked rice and weights, and sealing it in a barrel. This method helped prevent the fish from spoiling and gave the fish umami, the savory flavor. It wasn’t until this preservation method made its way to Japan, during the 8th century, did the rice began to be eaten with the fish.

I got a sushi restaurant near my home that actually sells sushi the size of a hockey puck. Some are even larger. The name of the restaurant is literally translated as 'Big Sushi'. You wont want them tho, you got more rice than fish or whatever you put into sushi at the end as most of the size comes from the rice ball. Not economical at all.

Any sushi with spicy mayo, imitation crab, cream cheese and eel sauce just disgusted me. They're basically adding these ingredients to mask the flavor of shitty quality fish that has no business of being a sushi in the first place.

@@petrichor3647 but that's literally the 2 most basic ingredients of sushi, except it's got more than just rice and fish. Plus even if it isn't "real" sushi i think it tastes equally as good as authentic sushi from a Japanese restaurant (although I'll admit they taste very different). The main difference is cost, presentation, and the experience of the chef.

Rosieopolis Goodness I forgot I commented this three years ago. The reason is because in American supermarkets, the sushi rolls tend to be shipped in from factories rather than made in-store, and the rice always tends to be this smashed singular membrane to the point where you can’t see a single rice grain that (and it always tastes stale and strange). However, last summer our local Walmart had freshly-made sushi, but I think it isn’t very common considering our Walmart caters to our large asian community 😅. Long story short, if you wanna pick up decent cheap sushi from a supermarket, Japanese supermarkets that have a freshly made food section are always reliable! I like to get quick sushi from places like Marukai, Mitsuwa or Nijaya Market (:

In Brisbane Australia the first sushi vendors started selling in the late noughties and practically overnight it became the most popular inner city lunch food, there were huge lines for it and nobody cared because the lines moved so fast, now the vendors are everywhere and still doing a reliable trade.

The California roll was NOT invented in the US, it was invented in Vancouver, Canada. Japanese-born chef Hidekazu Tojo, a resident of Vancouver since 1971, created the California roll at his restaurant in the late 1970s. Tojo insists he is the innovator of the "inside-out" sushi, and it got the name "California roll" because it was popular with patrons from Los Angeles.

Sushi is only high brow outside of Japan. In the US it's an exotic, different cuisine that you don't eat every day, so prices rise to reflect perceptions of rarity. Really the rarity in the west is actual japanese making sushi. 2 out of 3 sushi places I visit have chinese owners.

Sushi is also pretty luxurious in Japan too, there is definitely lower-end Sushi but the OP remains correct to an extent, it used to be ONLY a street food and now it is also quite often a luxury food. The biggest reason sushi is 'expensive' in the US (its not really that expensive unless you search for expensive sushi) is because the vast majority of US states are land locked. The same way you can afford lobster and crab easily if you go to a coastal state but not in a landlocked state.

I think the roll being flipped inside out was done by a Japanese sushi chef living in Canada, he's also the guy that made the California roll. The man's name is Hidekazu Tojo and despite claims by other chefs the Japanese government recognizes him as the creator and made him a goodwill ambassador of Japanese cuisine.

sushi rice being good is the most important thing separating good from bad sushi. I don't care how fresh or tasty the fish is. If the rice is too bland or too vinegary or too cold it's not good sushi!

Funny thing is "California Rolls" originated in Vancouver, B.C. by a Japanese chef that moved there and wanted people to try sushi. He made the roll inside out and replaced the fatty tuna belly with Avocado. The roll became popular with LA tourist, got named the "California Roll" and the rest is history...

Nori is technically seaweed but there's a whole process behind turning it into sheets of nori. I've never actually taken a look at the process though. I think that's what they meant

the opening statement for this video about Sushi is it's rice. I thought that was going to be the theme of it but for some reason it became an oral history of the invention of sushi and in the conclusion was revisit to the rice. WTF Vox this edit = bad. Maybe have a longer version that clearly would've connected the story more cohesively.

That Sushi didn't origionate from fish doesn't mean it's not about the fish. I don't know anough about Sushi to make any claim to what the real secret of Sushi is, but this video was more about the history of Sushi than what it's 'secret'is. If you don't know anything about sushi, why are you speaking like you do...? In the video, they said The 'secret' of sushi is that it's the rice that makes it distinctively sushi, not the fish. Not that hard to decipher. Also, you can find sushi with rice on the outside at just about any sushi joint. Just because you haven't seen it doesn't mean it's not there...

A lot of Japanese words with "r" you roll them and make a "d" like sound. so Nori sounds like "Noh-dee" and Sayonara sounds more like "sai-yo-nada"

Isn't it AMAZING how the world gives us the choice to not partake in something if we don't like it?! For example, there are some foods I don't like (but I do like sushi), so I DON'T eat them. There is some music I don't like so I DON'T listen to it. Similarly (and I hope you see the pattern by now) there are some videos on RU-vid I don't like so I DON'T watch those videos! Additionally, I don't go into the comment sections on those videos and comment about how much I disagree with what they're saying. I realized this fact a few years ago, and it has simply *transformed* my life! I recommend it to everyone I meet.

You're* You know Hayden... that's a great argument... and completely irrevant. Pikapetey is correctly pointing out how Vox - as a channel can't even seem to keep on the objective and factual side of things...in random videos. Now if all of their videos were subjective, unresearched messes, your argument would carry a lot of weight. WE'd just unsubscribe. But when it's very few videos, that's not really an option. And our opinions are perfectly valid.

No, sushi refers to the vinegar rice, and in China they didn't eat it. In Japan however they ate the rice and the fish. Don't worry.

Korean also, especially eastern coast of peninsula, have eaten rice with fish from ancient times but fermented rice with fish (밥식혜, Bop Sik Hye).
