The receipt we used for years to make Sichuan dry meat and sausage.| LiziqiChannel 

Here is the recipe in English: Preserved pork(Chinese bacon): 1.Szechuan peppercorn 100g 2.Rhizoma kaempferiae 10g 3.Fennel seeds 10g 4.Pepper 10g Grind 2, 3, 4 and put all the four spices into a heating wok and stir them. Add 200g salt and continue stirring for a while(when you can smell the strong aroma of the spices and the salt is dry enough, remove it from the wok) Stab a hole on each piece of pork belly so that a string can pass through it. Pour the salt with spices on the pork belly and rub them, add some tangerine peel(it can be replaced by orange peel) Tile the seasoned pork in a basin and wait for 7days. During this period, turn over the pork once. After 7 days, wash them. Then dry them in the sun for 3 days. Sausage: Pork 10kg（some pork fat is necessary） Szechuan Chilli powder 100g Salt 250g Cumin powder 5g Ground pepper 10g Sugar 20g Szechuan peppercorn powder 20g White spirit 50g Mix all these ingredient and inject the mixture into a casing. Stab tiny holes on the sausages to let the air out. Cut some cypress twigs and burn them under the pork/sausage to give the preserved meat a smoked flavor. Then hang the preserved pork and sausages in a dry place for more than 20 days. They can be preserved even longer. The best temperature for making these preserved meat is around 10°.

My parents grew up in the same province (Sichuan) as Li Ziqi. They were a dirt poor farmers family and could only afford to eat meat at New Years. My parents families as well performed this type of preservation process with meat in prep for New Years. After they both worked hard, my family now live in the upper middle class in Australia. To this day they still hang preserved meat in our garage next to the cars! 😂😂😂

My father use to make Cantonese style Chinese sausage, This girl is good, strong hands and very dedicated to her craft both in making things and filming. Hope she took her grandmother to Beijing with her.

Clearly a great deal of effort was required for video of such quality and contents. And it is also pretty clear that she is skilled with not just cooking but much more. Yes we don’t see her face with the hands all the time but real food video should be focused on food preparation and not the face of the chef. Compared to those that produce lazy videos that are sleazy, crude, idiotic for viewership, hers truly display the sincerity, hard work and thoughtfulness.

The ability to produce, process, store and cook food products, like Li Ziqi, is a dream of many if not most housewives. To most of us, it remains a dream and thank goodness for groceries and supermarkets. So we enjoy watching her do the things we can only in our dreams.

When I was a kid this is exactly how my grand parents prepared preserved meat and sausage for the upcoming Chinese new year. We'd use cypress tree leaves, orange peels, and dry wood power to smoke it. Now my grand parents are gone and the tradition is gone with them too.

The first time (around 1982) I visited my mother's hometown, Chongqing, I had the chance to try the Sichuan Sausage and the dry meat. There were like food from heaven, super delicious!

I feel like a lot of people don't realize that you can actually prepare meat like this even in your own home. My family does this to a much smaller extent with a shorter wait time and different ingredients. You just have to know the right way to do it so that the meat is safe to eat. You can also buy sausages similar to this premade at Mexican stores and hang it in your house with a fan next to it so no fly's go on it and so it can dry up.

I can't understand the words but you don't have to, to enjoy this young woman showing us where her food is grown and how to preserve and cook it. Though I'm not a spicy eater, so I couldn't eat a lot of what she makes but that doesn't make it any less wonderful. Excellent videos and relaxing for us, but Li must tire herself out doing all this. What I would like to know is how large is the property she and her grandmother live on? Is it her grandmothers?

This lady, as a matter of fact, as it seems from her actions, has a clear purpose, which she executes, most effectively, almost brutally,without losing focus or wasting time. She could be a great Army General.
