Rockstead knives are extremely high quality, but theres also a fair amount of woo-woo nonsense surrounding their products. "Will cut better than any kitchen knife" falls firmly in the woo-woo nonsense category. I wouldn't even call my .06" stock, sub .005" BTE nakiri the best slicer in the world, but i guarantee its a light saber compared to that. No heat treatment in the world will ever defeat simple geometry.
Well the heat treat might make it cut longer than any other kitchen knife and most knives in general but it doesn’t necessarily make it a better cutter. Though it has been proven that mirror polished blades cut better than non mirror polished blades just simply because they have less friction but you are right. That doesn’t make it cut better than a knife that simply has better blade/cutting geometry.
