I was a chef in a catering company in Oakland from 2004 to 2014. I've met this man and he's not pretending to be humble "he really is!!!!!!". But when he told the story of his first truck I gotta admit I didn't know it but he inspired a bunch of us back then and now inspires me more now. Love you bay area, we are stronger than we pretend not to be.
Adolf Shekelberg “descending into chaos” the Bay Area has never been as peaceful as it is today. If you saw Oakland, SF, Richmond, Berkeley etc 10-20 yrs ago, the amount of violent crime was staggering and you can see it from the property values then. Not to mention the crack epidemic in the 80s. Only newcomers or people with amnesia think the Bay Area is dangerous.
@@SultanMenzuma www.sfchronicle.com/crime/article/A-violent-year-Bay-Area-murders-spiked-36-in-15857202.php You must have a very warped definition of peaceful. Well you're simply ignoring reality.
pistol shrimp You must have a warped sense of reality if you think a spike is representative of the recent history but that’s typical for reactionaries. From your own article that you linked “While the trend is troubling, San Francisco’s increase came after a 56-year low in homicides in 2019. The 2020 figure is still lower than almost every other year since the 1960s, and is dwarfed by several years in the 1970s, ’80s and ’90s, when there were regularly twice the number of killings.” You didn’t even read the whole article you dipshit.
@@Valquill No I'm Swiss and the people in the Italian speaking part have a much different accent. His first language is Swissgerman. But since Italy is so close we usually know how to pronounce stuff like that, very few Swissgerman speaking people actually speak Italian though.
@@terrymitchell7057, as an American I've never heard it pronounced any other way, than the way he pronounced it. Your opinion must be an ignorance thing.
I see these folks every week at the farmers markets, I don’t eat a lot of meat, but their porchetta sandwich is phenomenal. It’s got an excellent contrast of crispy, juicy pork and sweet onion jam.
Keep these videos coming @Muchies ! It restores my faith In humanity . We have immigrants from all over the world just trying to get by with hard work! Will def be adding this to my list of places to go to :)
HOT TIP: If you're early enough and find a Roli Roti truck AND they still have Ham Hocks left. Get them. You guys were my saving grace in college, Thanks Thomas.
When I fly to San Francisco from the east coast, BART to Ferry Building and this place. People like this make a city great. I wish he were 2,500 miles closer.
Have been going for years. I love the “would we have made it without it? Yes of course.” Much love Thomas! My son loves your food for all 4 years he’s been coming there!
I’ve lived in San Francisco for almost 3 years now and haven’t been here. For everyone to say it’s too die for and it’s really that good, I’m missing out💯 and now I’m taking advantage! I’m Going to get my plate😩❤️
The best sandwich I’ve ever had. Very flavorful. Bread, pork, onions, arugula, and crispy skin all blend well together. Definitely a party in your mouth.
YES! THIS MAN GETS IT. every time i watch these meat related restaurants and see all the meat juices going to waste on the board. This man is the ONLY one that use those juice on his food.
@@ggitslificious @Sonfoku i can read, "every time i watch these meat related restaurants and see all the meat juices going to waste " nobody wastes it, CAN YOU READ?
What a brilliant idea for a food truck dish. Porchetta, the street food harking back to ancient Rome. Kind of mother of all street foods prepared with utmost care just like it is meant to be. Welldone, Herr Odermatt.
@- i don't know what you mean by singling out one country, as "trash" we're talking about gravy here, all you need is drippings from a cooked animal and some flour, it doesn't matter where in the world you are you can't get it wrong.
Seriously ... he always has lines. I've been to 3 different locations and there is always a line and it's so worth the wait. The meats are so flavorful and his potatoes are out of this world delicious. If you are ever in SF, definitely check him out at the Ferry Building at Saturday's Farmer's Market.
6:03 I really really admire the chefs who tell their own recipes in all honesty without any fluff or things like "our own secret rub". This guy is such a great and humble person and it shows that just from his personality itself. The food looks mind-blowingly amazing and I would have definitely visited him if I wasn't living on the other end of the earth haha!
I am genuinely so happy for this man! He has such a great energy about him and his work ethic is outstanding. I'll have to make a stop if I'm ever around!!
That chicken and potatoes reminds me of El Pechugan in Puerto Vallarta. Some of the best street food in the world is there. This guys food looks incredible.
He really did living his life to the fullest, i can see how he will die without regrets becuase how pure his soul is. And of course his foods look awesome !
I'm so excited and so proud to say that I'm a Native San Franciscan born and raised in this beautiful city and yes the sandwiches are to-die-for the line is long but it's so worth it and I'm going this weekend to the farmer's market because things are getting better with Covid 19,-So now its the best time to eat well & continue to be happy safe and Full of porketa!!!!!
@@obijuankenobi420 It hasn't always been like that. My family came here in the 40s after WWII. Ups and downs, good and bad. Constantly changing. This too shall pass.
(Update) Wow! First I was salivating, then I got teary-eyed of heartbreak story, to final joy for spiritual comeback. Fyi: This "chef" speaks from the heart
the humility he has really shows how classy he is, this is one bread I'll gladly pay without any regrets. heck i'll even pay him extra so he can offer some of those quality cuts to some poor or homeless who cant afford it try them out.
I think a food truck would be the only way I'd get into owning my own business. Seems like you get to choose what hours to operate and mobility makes it to where you can test out different locations to maximize your profits!
I'd say you get in, get in only if you're passionate about your food and what you cook. Cause else itll be like a chore for you. Take it from me I used to work at a 5 star restaurant just for bucks but didnt had any liberty, now that I have my own cafe I'm more than happy and content
When he rubbed that bread all over the cutting board and the porchetta to get all its juices, holy cow. I'd eat that bread alone w/o anything, I'm okay w/ that.
Authentic Italian porchetta is amazingly succulent and flavorful, and the way he soaks up the juice from the pork onto the ciabatta bread only then to top it with onion marmalade and arugula makes me want to fly out to to try that. Excellent job!
One of the first ones where I've seen the guy just tell you exactly what seasoning he's using not oh it's a secret I can't tell you everything , which is super cool , my flatmate nonna used to make porchetta and send it over at Xmas and he would share with me and it was amazing 😍
Omg, everything about this is so Swiss. His name, his way of speaking. The fact that he sells rotisserie chicken with roasted potatoes out of a food truck. Peak Swiss energy
Facts💯. I live in Bern Switzerland n mostly the first friday of every month is when every rotisserie truck sells chicken but, but the pork kinda looks 🔥🔥
I live in Los Angeles, I have been to SF numerous times and EVERY time I've gone I have made time for the Porchetta sandwich. I haven't been in about 3 years and I miss it to this day! I would go to SF at this point just for that sandwich. It is amazing and to anyone going I highly suggest it! Also can't forget the potatoes!
Every block in Mexico has its own rotisserie , instead of porchetta they usually have pork ribs and yeah those potatoes that have been soaking all the juices that drip down are freaking insane jajaj
Thomas is a good business friend of mine...he is an outstanding human being, and 100% what you see here. Plus, everything he touches turns to gold...he was playing with bone broth made from his chicken bones, and that playing is now a multi million dollar business! You can buy it in supermarkets now. An immigrant who has embraced American entrepreneurship...it doesn’t get any better!😉😉
Used to go every Friday old oakland farmers market. Now with wfh I'll catch you at grand lake farmers market. Please sell the salt you put on the potatoes... absolute crack
This is truely the thickest accent we have at the swiss alps, when talking english. We call it being "Bünzlig". A very sympathic guy nonetheless. And his artwork looks impeccable.superb, not to be exaggerating
Почему-то все когда смотрят такие видео, в первую очередь думают о том как это круто, но никто не обращает внимания на то, что эти люди очень много работают. Thanks for your video! With love from Russia :)
I go running by here on Saturdays and had no idea this was the reason everyone stood in line. Not lying the line for this place is crazy. I always wondered what kind of chicken everyone was queueing up for
