I’ve seen a lot of people saying cottage cheese is a Creami ingredient upgrade but I’ve been very skeptical. You really got me thinking about that raw eggs in brownie batter comparison though. Think I’ll have to try this!
New subscriber here 😁 If using a 100% whey protein instead, would you typically use 1/4 tsp of both Xanthum and Guar gum? I don't have any experience using the gums, just trying to get a baseline and will adjust from there.
Yes, I would recommend 1/4 tsp of each. Not heaping teaspoons either, exactly 1/4 or round down a bit. If you only were to get 1 gum to get started, I would go with Xanthan Gum. Then start with ~3/8 tsp and adjust from there. In my experience, Xanthan Gum is better for removing icy-ness, but the blend of the 2 has felt best to me, but it's going to vary with the powder you use. Thinner powders generally need more gums and thicker ones.
What percentage of Cottage Cheese did you use? We have a "low fat" with 1.5% fat. Would that be great to use? Also, how many grams for a regular pint? I have the deluxe.
You are most definitely not alone! I cannot stand to look at the stuff. I rate it up there with rice and grits and I am from Georgia. Those three foods are some of the worst ones to me. In order not to throw them away, I just do not buy them.
