This is my recipe for an amazing Shrimp Fried Rice. See below for tips.
1.5 cups leftover cooked rice
17-20 medium size raw shrimp (shelled, deveined, wiped dry)
1 egg
1/4 cup cubed carrots, peas and corn
1/2 red onion finely chopped
1 scallion/green onion finely sliced
2-4 tablespoons all purpose soy sauce
1/4 teaspoon sugar
Salt as desired
3-4 tablespoons vegetable oil
Method:
Heat pan until smoking hot and add 1 tablespoon oil
Add shrimp & fry until half-cooked/slightly pink
Add egg and scramble it
Add vegetables saute for 1 minute
Add rice and fry for 2-3 minutes. Add more oil if rice and pan are dry.
Add salt, sugar, and soy sauce
Mix well. Fry for a further 2-3 minutes.
Taste and add more soy sauce or salt if needed.
Let the shrimp fried rice rest for 5 minutes before serving.

Secrets:
1. Use a smoking hot wok (preferably seasoned, non-stick)
2 Sugar- a little sugar enhances the flavors
3. Fry the egg in extra oil so it puffs up
Tips:
* If using frozen shrimp, defrost in water for 10 mins and pat dry with paper towel.
* Use a good quality dark soy sauce (La Choy Soy Sauce is preferred)
*Add a tablespoon of oil if the pan or rice looks dry
*Avoid putting the shrimp directly into hot oil
