Thank you for such a accurate review & more so the actual recipe. I had this oven 8 years ago, you cannot use it to make heavy loaded pizzas, such as supermarket ones. They must be light & simple, you did an excellent job. I am tempted now to buy it again and follow your exact steps and instructions, will buy the 00 flour this week. I have had a few similar pizza ovens, this G3Ferrari is by far the best I have used. I normally cook around 2.5 on the temperature dial and it takes about 4 1/2 minutes depending on the dough and toppings. a 12 inch pizza will just about fit, 11.5 inches is a good size. Had mine for years and I love it. Bought off Amazon so they are pretty easy to find and buy.
I have an Optima Napoli pizza oven, which is very similar to the Ferrari. I'm sure an Ooni or Roccbox makes a better pizza, but this thing is very quick and convenient to use indoors, perfect for me since I usually only make one or two pizza's. Tried your poolish recipe recently and it tasted delicious.
Thank you Chef. One more great thing about this portable pizza oven is that you are not heating your house with the oven or taking 30 minutes to heat the pizza stone. Hope you are enjoying your time in Sardinia.
Are you using yours in the us? I just got one but the top coil doesn’t turn on, and I can’t return it- not sure if it’s the unit or the electrical converter I got since it’s an Italian plug
