I thought the same, I've worked in the kitchen for 25+ years. That chef came across as a proper sound and friendly bloke.

He looked excited and proud, and he should be. He found Mr. Beard’s exact limit of possibility (at least on a day when his system is already packed full of food), and even helped provide him the encouragement to get through it. I think this is the ultimate accomplishment a chef or restaurant could strive for when creating such a challenge. If it’s just impossible, then it’s just a joke and an insincere “challenge”, but to find what is Barely possible at the highest levels of performance is to truly set a meaningful bar. I hope this brings other high-performance eaters to Public House to take a shot, and perhaps Mr. Beard will return in better condition sometime to break his record :)
