A decade ago, there were fewer than 50 grass-fed cattle operations in the U.S. Now there are thousands. Clearly people are eating this meat. Trendiness aside, NPR's Allison Aubrey asks: Is grass-fed beef more nutritional than standard, corn-fed beef? And NPR's Susan Stamberg and Ari Shapiro weigh in on the taste.

What she didn't mention about the corn-fed beef is that they stand in their own crap all day and have nowhere to lay down at but in their own crap. It's a tight feed lot where too man cows are squeezed together. It's horrible. Also I noticed that she only showed the grass-fed cows. Ya know why? Because they are cleaner and not covered in their own crap. They have no freedom in a feed lot. Being in a pasture lets them exercise and be more happier essentially. They have feelings too. I know, I have cows. They do not deserve to be in a dirty gross feed lot. One suggestion though. Everyone in the world needs to watch the movie Food Inc. it tells what it is really like.

@strid3r34 Yeah you do have to worry. All cattle have the capability to carry E. coil O157:H7. Go ask a livestock veterinarian. Eating it rare is okay with both though.

This is incredible! My two favorite entities, Cooks Illustrated and NPR, coming together to make beautiful babies. Sign me up! And since when is corn-fed a grocery store beef? Oh wait... that's right, I live in the Napa Valley...ha! : ) Great work!

herbivores don't mean they only eat herbs it means they eat plants...an animal that eats only corn would still be considered a herbivore.

It also depends how you cook it. More fat allows you to be a lazy cook and still get it right. Grass fed is better for the farmer and, relatively, the environment. It just depends where it comes from. Also corn fed cattle also goes to a "feed lot" before butchering. If you have driven by one, you know why they are a bad thing!

Clearly grass-fed is best, but does exercising the cows yield any benefit to the nutrition of the meat? Why not fatten them up with grass like they do grain-fed cows? There definitely are ethical concerns but purely from a perspective of efficiency and producing the most high-quality meat.

no discussion about cows kept in feed lots, abused, but fed dried grasses and the meat is labeled "grass fed" but they are not pastured???

And what is the health difference between Grass Feed and Corn Feed? Corn Feed is unnatural feeding for cattle - this changes composition so you are at a great health risk!

You never stab a steak. You also need salt and pepper, and higher heat. she obviously doesn't know how to cook. Grocery store beef is crap, get a choice or prime piece of beef for your test.

she should have had real meat men and / or chefs doing the tasting. not people who eat piles of crap all their life, to such a degree that they no longer have palates.

corn fed beef is nut humane and it doesn't taste good. Anyone who thinks corn fed beef is the best tasting obviously hasn't been to Argentina or France or any other country renowned for great beef. Guess what, all of the beef there is grass fed.

Grain is OK...I was raised on a farm and I know. The problem is not the grain but what is in the grain. Monsanto and the GMO foods are the problems here. NOT the cow or farmer. Not only this but all cows eat grass as they are allowed out to pasture every darn day so these people are silly.

two different cuts of steak both sirloin one had fat on the edge the crn feed had less on pieces they chose. just saying. i'll take Bison..lol

You need to cook the grass fed beef slightly different from the corn fed beef to make it more tender. If you cook them the same way the grass-fed is going to end up less tender.

the only reason we have corn fed cattle is because of the huge food industry trying to make the cheapest product they can get. corn is overly abundant in america so its incredible inexpensive to feed it in bulk to cattle. cows are supposed to be eating grass, thats what their stomachs are built for. when we feed corn to cows, along with the chemicals and antibiotics that they feed them, we get unhappy, unhealthy, unappetizing, and inhumanely produced meat

Actually, actually, actual and actually. Wow 99.999999999% Who do you work for, Monsanto, Bayer, Cargill or the industrial beef/pork/ poultry association, Lobbyist? People have been sold a bill of goods over the years, they are starting to wake up which is a good thing, maybe not for your paycheck.

Cows of any breed eat grass! Period! it's natural! Cows should not be fed with corn! It hurts them while digesting it! Our taste nerves are ruined! We don't appreciate the 'tougher' taste of real muscle meat from beef! Joe from Germany

You can't cook grass-fed beef as much as corn-fed. It has less fat, so of course it's going to turn out tougher. And with grass-fed, you don't have to worry about E-Coli, so it's OK to eat it more rare.

Actually I think you are playing to the Big Ag agenda, I will continue buy pasture raised beef, pork and poultry, and I actually know the producers personally.

As others have pointed out, if you wanted to do a true taste test you have to cook grass fed beef differently than corn fed!!! Otherwise your results are bias towards one side.
