3 pounds salted cod
1 large onion chopped
5 large cloves garlic
1/2 cup cilantro and thyme chopped
2 tsp paprika
2 eggs separate yokes and white
1 tsp bullion powder ( if needed)
1 tsp Vet-Sin gourmet powder
1 cup canola oil for frying
Place cod fish in cold water over medium heat and bring to a boil, let boil for one minute and change water and repeat . check the fish for saltiness and if necessary repeat that process..
Drain fish and place in food processor and pulse until loose and fluffy.
Cook onions, garlic and other fresh seasonings until soft,
Add egg yokes, cooked seasonings, bullion powder if needed, paprika and vet-sin and black pepper and mix well by hand.
Whip the egg whites until frothy and have stiff peaks then fold into mixture.
Base your hand with some oil and form mixture into balls or patties and set aside.
Fry at 350 degrees F. for 1 1/2 to 2 minutes. Or until golden brown.
