300ml avocado oil (or sunflower/grapeseed oil)
300g of brown sugar
3 eggs
250-300g of grated carrots
2 teaspoons of baking powder
1 teaspoon of cinnamon powder
2 teaspoons of ginger powder
Optional: 100g of grated mixed nuts
Icing
200ml of great
200g of mascarpone
4 spoonfuls of white sugar
A dash of vanilla extract
