Things I love: - Barry's chopping skills 😲 - Jaime's swinging of hips while fanning out the smoke: unnecessary (I mean you can still just flap the tea towel while standing still) but pretty much adorable - James' ability to bring the whole dish together, and the plating of course - The way all 3 of them contributed to the dish by playing on each of their strengths - How well the video was edited (that second you see/hear the steak go into the pan wow) and the music choices were also great

@blatinobear
@blatinobear 4 года назад
skippymagrue Yes, Chimichurri is from Argentina and it’s amazing, but it’s a big no-no to put it on steak. It’s meant to go on choripan (chorizo sandwiches) and bondiola (grilled pork). It’s a poor-man’s side enjoyed in your neighborhood’s equivalent to pubs and bbq stands. Brazilians, who are the most common tourists to Argentina, took the idea and ran with it, and started featuring it in expensive rodizios (churrasquerias like Fogo de Chao). It then spread throughout the world as a steak condiment. It works, but it’s as unauthentic as Taco Bell, fortune cookies, and colander strained egg fried rice. A proper chimichurri is almost red and marinaded at least for days. It’s not a “fresh” condiment in Argentina. But it is delicious.

that sounds delicious! I'd love to try it,but I don't love pineapple enough to buy one for its skins and core, do you think tinned pineapple would work as a substitute?

I always throw the skins in the compost, because a craptonne of people have been handling the pineapple, but I throw the cores into whatever sauce or marinade I'm making. They're not good eats, so I leave them whole to be fished out after they've given up all their pineappley goodness...

The core is delicious to chew on specially if you have a really ripe pineapple & the skin makes a delicious drink in my moms country called fresco de piña con arroz, so it’s kinda like horchata but made with pineapple peelings.

I am a purist when it comes to steak. just salt and pepper.....but then there is chimichurri. Best thing ever!!!! One Argentinian steak house i use to go to all the time added finely grated carrot to their chimichurri. Loves that tiny bit of sweetness it added!!!!

Pineapple with chimichurri is actually pretty normal to me. See, when I was a teen and first started learning to cook, way before school, way before working as a banquet chef, the first thing I learned to make was this salsa which was basically a chimichurri (with the addition of red onions and cilantro) and it had grilled pineapple. Being a Ukrainian family we'd eat it on smokeys, grilled mini smoked kielbasa in hotdog buns, it was so good.

Poor Barry can’t have pineapple. Idk why they didn’t choose something he could have on the side or something. Watermelon maybe with feta?

You guys honestly nailed what chimichurri is. My mom is from Argentina and you're recipe is very close to the traditional one. I still recommend chopping not grating the garlic, and if you like heat use the seeds, not the pepper. Pepper is not recommended, but lots of salt is. Lots more oil compared to red wine vinegar

From what Basque I've picked up, the tximitxurri thing makes PERFECT sense and I never connected the two! They have names like Echevarria (originally spelled Etxeberria), etc, so the word structure makes complete sense in hindsight. I always love seeing bits and bobs of Basque pop up! One more thing to love about one of my favorite sauces.

I am from Argentina and I went to cooking school and of course chimichurri was part of the classes. In my recipe it is Parsley, Oregano, salt, pepper, Sweet paprika (we call it pimentón dulce), cumin, chilli, vinegar and Olive oil. The cumin gives it that earthy dry flavour. I am not saying that what you made its wrong, but my recipe is different. (I forgot, something that was also specified in class is not to make a garlic puree it should be also knife chopped, you want small chunks of it)

Suggestion for Pass it on: Suprise Fusion: Write a number of countries on pieces of paper and chuck em in a Hat. Then the first person in the kitchen picks one at random and Cooks the main dissh, followed by the second person. Between the second person and the third person the kitchen needs to be cleaned. Then the 3rd person picks a country out of the hat and cooks the side dish followed by the 4. person. Then the 5. person gets to finish the dish by bringing the 2 creation together. Maybe adjust the time for each person so the dishes can be done by only 2 persons each.

Which sauce next: garlic mayonnaise done easy. My recipe uses the kenwood multiprocessor Pro and goes something like this: 3 whole free range freshest of fresh eggs 1 big heaped tablespoon of smooth mustard (i use honey mustard but I'm a bit of a sweet tooth) 2 tablespoons of white balsamic vinegar Sunflower oil Pinch of salt Teaspoon of oregano Optionally a crack of pepper 1 bulb of garlic (one of those small purple ones that kinda look like small onions) grated I challenge you to make this recipe better and to pair it with something delicious. Personal favorite is either shoarma or chicken gyros (flavor packets available in most supermarkets to make your own)
