Today we used Uncle Steve's Shake Magic Ribs on baby backs for our first cook on the LonestarGrillz El Patron hot box cooker. These ribs on this cooker truly were MAGIC!!!

Great cook. To answer your questions, I am team Spare ribs. The best ones have been with a Meat Church Holy Cow baee and Meat Church Texas Sugar. I finished with a Blues Hog Tennessee Red glaze. All smoked on my Weber kettle with a Spider Grills Venom at 275 with B&B briquettes and Cherry wood

@@TheDawgfathasBBQ I really love the Venom. My yard tends to be windy 10 months of the year, and no matter where I position the kettle, it needs a vent adjustment every 15-20 minutes to deal with the changing environment (July/August when there is very little wind, the kettle is very stable and almost set it and forget it). The Venom holds temperatures very well.

Both spare and baby back. Off set, pellet, kettle, metal rack over wood. Old fashion s.p.g. 16 mesh on the peeper, kosher salt granulated garlic.Malcom Reed bq rub. Cook on what is available. Cooks what's on hand. I have even made corn bread in the smoker.

Looks Amazing Alton. I just Ordered my Majic Ribs Yesterday. Can't wait. Everyone is saying how great it is on the ribs. I will run with Spares 99% of the time. Baby backs would be my #2 depending on availability. They are both delicious. 😋🤪😛

Howdy Alton. I like both but prefer baby backs. And that holds true for most folks up here in the Pacific Northwest. And i always recommend first time pork rib cooks to first learn on baby backs because they are more forgiving and way faster. Great video sir.

How did you set up the El Patron forthis cook? Where did you build the fire? On the fire brick or the fire grate? Did you spread out the coals or use a basket?

Good question. I actually filmed that but decided to cut it out. I built my fire in the center on the fire bricks IN the charcoal management basket. I had the diffuser raised above the fire basket and ran that way. When I do direct heat, I'll spread the coals across the fire brick, remove the basket, and open the diffuser level to expose the fire to the protein.

Man the smoke flavor here was really good. I honestly thing the flavor was slightly more pronounced on this unit.

I know these bones were bangin'. I lean more to the St Louis vs the baby backs but that's because St Louis is what I cook in comps. But, a good eating rib is a good eating rib! Great job brother!

I ran with the baffle plate in place to do an indirect cook. I used the fire management basket on the fire bricks too. GREAT smoke flavor!

I like baby’s a little better. My rub is pitboss sweet heat. I basically do mine exactly like you but instead of butter I do little apple juice. I’m gonna try the butter next time and do a comparison test.

Sounds good to me! I do apple juice as well. It just depends on what I feel like the day I am doing the cook and/or if I have apple juice on hand. As far as rubs go, sweet heat is always a good selection.

Those ribs look phenomenal. ...LOVE me some direct heat ribs. I have a TMG Dumpster - absolutely LOVE this beast....it's my "endgame cooker". that lower front door access lower cooking grate is a fantastic design. I cook my ribs at 300F over a coal bed with an occasional small white oak split thrown on to keep the temp up around 300F - give or take a 10-20F here and there. The ribs are generally done between 2.5 and 3 hours. Don't temp - just go with the flop/bend test, as well as the watching for pull back around the bones. I prefer spares to Baby Backs - but it's all good. I typically use my own SPG+Paprika blend, but I was lazy two weeks ago, and just used Kinder's All Purpose seasoning. If you haven't done it yet, mop your direct heat ribs. Stick of butter sliced onion sliced lemon - I used lemon juice from a bottle last time - being lazy Apple cider vinegar worcestershire sauce Hot Sauce - your choice yellow mustard or mustard powder minced garlic or garlic powder - I used minced garlic from a jar - even more lazy... SPG+P Water or beer to thin it out. Add whatever you want to make it your own... Let it all simmer for 10-15 minutes, and start mopping both sides of the ribs (or pork steaks) after about an hour - once the seasoning sets on the ribs. Then mop in another half hour. Then about every 15 minutes until the ribs are done.

Why wouldn't you check temp? 200 to 203 is usually perfect for me. I've had wrapped ribs and they taste fine, but baby backs are usually done in 3 hours at 275 degrees, depending on the smoker and I never wrap, just spritz regularly. Good cook.

Honestly speaking, who cares what the temp is as long as I have the tenderness right? There are times, depending on the animal the rack came from where you can be at a certain temperature and the tenderness is not where you want it. Would you pull them just because they hit a number? For me, cooking to tenderness has yielded me way more consistent results so that is why I cook the way I do with ribs and brisket. I often cook without wrapping the ribs unless the color I want is hit before the tenderness is. Then I'll wrap to get the tenderness to catch up to finish off the cook. Good question though brother.
