He should be very proud of all his hard work that got him to where he is today. He seemed sheepish about having to explain why he charges so much. I wish I could tell him to own it, and never feel he has to justify it. I used to have a cake decorating business....custom cakes take hours and sometimes days. Lots of labor and I used the best ingredients. I undercharged for every cake because customers would complain about how much a custom cake cost. I lost money on every cake, and never turned a profit...having to shut down the business. I was young and foolish back then, and I hope he'll never cave to a complainer who doesn't want to spend what his time/business/food is worth.
I feel that he is so sheepish because of all the criticism from ignorant consumer who eat to live and not live to eat. Someone who don’t care how hard someone work on food, they just want cheap fast food.
Same, I’m actually in the middle of finishing up my apprenticeship to become a chef as well, but seeing him already owning a restaurant at his age is unbelievable, it also makes me wonder what I did wrong
It's not per dish, they're basically appetizers. Seems to be around 2kg of food total, so you are paying for 1.5 dishes, not to mention you may only enjoy 5/14 dishes for example. It's ridiculously overpriced for what it is, although there will probably be a very niché market for it I guess.
He's so cute :) and Tbh, charging 155 for 14 taster dishes per person is not that bad if you divide it up as it works out to be quite fair.. Especially since it's meant to be fine dining..
OntarioFishing15 You can assume that each person gets their own plate. So she is correct in that it is a very fair price. It totals out to be $11 per plate which, if it’s fine dining, is pretty good.
$11 for a tasting plate, not a full meal, isn't very good at all. I'm sure what he's going for is fine dining but he has yet to make a name for himself or his restaurant out there so the high price tag is a bit too much.

Tbh I have been to very posh restaurants where they try charge $155 alone just for one tiny meal. So to get a 14 course tasting for $155 it's doesn't sound as bad as you'd think. I mean it would be an evening experience, I doubt it would just be something that lasts an hour. And New York in a way for something like that is actually cheap when look at the small size meals at proper posh restaurants. You pay hundreds of dollars for a "wine tasting".
He/she not really paying for the food, he´s/she´s paying for tasting the food. Or in other words, the experience. Going to a tasting restaurant is like buying a painting from an art exhibit. I respect it but I´ve never really cared for it either. There was this restaurant, Alinea, on chef´s table (netflix) that I REALLY wanna go to someday though. They had floating food. Otherwise, If I was in his position, I would´ve opened up my own little cosy cafe with healthy and affordable food. Unfortunately, my cooking skills are limited to recipes lol.
You're not paying $155 for a tiny dish. You're paying $155 for 14 courses prepared for you one at a time by a professional chef. Tasting menus take a lot of time and work to execute. That is one gifted teenager.

Bryan Carrillo it's like paying for a whole Pizza, except it's not Pizza and instead you get healthy and delicious food divided in 14 courses with top quality ingredients in one of the most expensive cities to dine out. Of course it's worth 155 dollars.
Bryan Carrillo well, we may have to agree to disagree here...a tasting menu is a well orchestrated succession of dishes that require skill and high quality ingredients and to be honest at about ten dollars a plate that's very reasonable. If you get tapas in Spain it's a similar concept, this is not meant for daily dining this is an experience where you get to know a chef, their journey and their aesthetic. If food innovation isn't your bag then by all means don't ever go to this kind of thing, but I've sat at tastings and spent significantly more, some of those dinners were amazing and each one included marvelous time with family and friends and interaction with the Chefs themselves. If you enjoy food and its creation I'd suggest at least once in your life giving it a go, forget the price and remind yourself that it's an event as much as a meal. It leaves the realm of practicality behind and ventures into whimsical territory the same way a musical concert would. For a pragmatic person I can understand the Wtf-ness of it all, but then again, no one is forcing it! I respect your opinion and understand your view, but if you can, try to imagine the other side of the coin! Have a lovely day ✌🏻️

Sir Cartier In-N-out Burger is a little overrated. The only thing that I thought was worth trying from there, was the fresh-cut-fries. Wingstop has better fries.
Maddie Briggs good question. Im assuming its from his parents chipping in, though I still am not sure. Its expensive to start a restuarant, rent is high, everything is expensive there.
People often ignore these details in "humble beginnings" stories. True humble beginning stories are quite rare due to how difficult it is to get started from absolutely nothing.

$155 isn’t much for a 14 course meal, also you’re gonna eat 14 courses, how are you gonna eat all of them if you get a huge plate for each course? You’ll be full by 3-4 course
That's the whole point of a tasting menu. It's small portions but many courses. Remember this is art not a buffet even though you do get a lot of food in the end.
Loved it. That's what happens to people who don't limit themselves with thoughts of scarcity. He settled his mind into "playing with food" and money just floods in. Really brave and inspiring.
I agree you’re unlikely to be hungry; but the point of a tasting menu is not to fill you up, but to allow you to experience culinary art and all the intricate flavours that come along with it - it’s a blank canvas for a chef to display their finest little creations
It be basically 10-14$ per dish in 14 course meal which is ok some people pay more on their chipotle/mc Donald/fast food alone so 155$ ain’t so bad is just a one time thing for a date or to spoil your self and if don’t like it then don’t do it again simple as that lol.

You guys have to remember that if he is having 14 courses served to you, its going to take a loy of different ingredients. Each dish brings something new and is supposed to be enhanced by the previous dish. From what I can tell each course uses completely different ingredients than the other so that marks the price up a lot. If he doesn't get enough people coming to his restaurant, he would lose a lot of money on ingredients that were not used.
Well, in Brasil it's common to pay around 120 for a 4 course meal. If you take into consideration that the salary base is 720, it's around 1/5 of a person's salary to eat on a good restaurant. I don't think it's overpriced, when you put things into perspective.
