My Hungarian mother and grandmother would caramelize the cabbage (low and slow) with or without onion...then add homemade pasta or packaged egg noodles. Our comfort food growing up. I make it every week, usually. Some people eat macaroni and cheese, we always had "Haluska". Cheap and delicious...but must caramelize to bring out the wonderful flavor!

May I suggest that you use the correct translation for Kümmel which is caraway in English. The English cumin is Kreuzkümmel in German and has quite a different aroma. Love the recipe, thank you!

I was going to say the same thing that it is caraway seed not cumin seed. Also I crack my caraway seed before adding it to things like this as it is a pretty hard seed. It's also used in rye bread which is where people usually are familiar with it. Very Scandinavian.

bacon and apples (?) are optional - originally this was a dish for poorer people or farmers, and from times where meat was scarce (also cabbage is one of the very few vegetables that you can store in your cellar over months.) and not only it's good, it keeps fresh in the fridge for a few days - it even tastes better when you heat it up.

cook it in broth? what for...?? the pasta takes on the flavour of the cabbage, there is no need for the taste of a broth. and butter: there is no need for added butter, there is already a lot of fat from roasting the onions and the cabbage. please don't compare this with your plain pasta (where butter improves the taste) - every single fleckerl (square shaped pasta) is already full of the aroma of the cabbage and the seasoning.

totaly classic in germany. Called "krautflecken". And b.t.w.: Cummin is not Kümmel. It is Kreuzkümmel and taste totaly different. If you want to translate Kümmel(the stuff you use here) say "caraway seed".

@@richardcoleman1018 Cumin seeds and caraway seeds look quite similar, which is why in many languages, the name for one is a “foreign” variant of the other. E.g. in German, where caraway is native and cumin is not, cumin is “Kreuzkümmel”, literally “cross caraway”. In some other language (I forget which) where cumin is native, their name for caraway translates to “German cumin”!

I make a dish that I call sautéed cabbage with white wine & fennel. It usually consists of onion, garlic, cabbage, radicchio, bacon, prosciutto, broth, wine, fennel, salt, & pepper. I’ve made simpler variations, with and without meat, but have never incorporated pasta into it. I also don’t have caraway in the house. I’ll grab a small batch of caraway, and cut up the frozen wheat free lasagna, & use that. Thank you for sharing this recipe. Cruciferous veggies are my favorite veggies, and cabbage is at the very top of that list.

Never would've thought about such recוpe with a cabbage. I absolutely love cabbage. Nuddles. My grandmother would boil handmade nuddles with fried onions, as the nuddles are thicker, as better, the boiling time is longer to make the onions jamy and when it's ready, you add some white saulty cheese- it's very tasty too. I think some saulty white ingredient- liguid or soft cheese, is necessary to be here. This recepi called Inqal. I have caucasian origin and was born in Georgia,Soviet Union.

I may try out your recipe thou, I love this combination. One other thing I have to say about your video and you. Your kitchen is very clean which is very important when you are cooking. That is very similar to a dish we are making in Hungary. Our way to make the pasta is more efficient, and the fisish is simpler! No onion, but we grate the cabbage, salt it then about an hour later squeeze the juices out, and then we fry it in dripping until it turns golden brown mix in the pasta ... presto! Kids usually eat it with sugar, otherwise, just with salt&pepper.

I think the cabbage in this recipe probably will taste something like sauerkraut, but maybe not so strong. I think this dish needs some color. Maybe add some cooked strips of red and yellow bell pepper? or some raw, thinly sliced fresh radishes? or chopped fresh tomato? It might also be good on top of a bed of fresh baby greens?

Halushki? My mum made this and sometimes added bacon or if there was left over corned beef she'd add that. But also had lots of butter in it, salt and pepper.
