A sweet pastry from the 19th century, with this traditional recipe you will make your grandma proud! It is said that Hamburg bakers tried to bake a French croissant - this is how our beloved Franzbrötchen came about. Another, less likely story says that the Franzbrötchen was dedicated to Emperor Franz of Austria and his wife Sissi. We prepare a fluffy yeast dough with cinnamon-sugar filling and bake the Franzbrötchen until golden brown.

📋 INGREDIENTS:
• Dough:
• 250 ml lukewarm milk (1 cup)
• 20 g fresh yeast (0.7 oz)
• 500 g all-purpose flour (4 cups)
• 50 g sugar (1/4 cup)
• 75 g butter (1/3 cup)
• Pinch of salt
• 8 g vanilla sugar (approx. 2 tsp)
• Lemon peel (from 1/2 lemon)
For touring:
• 200g butter (7oz)
• 50 g all-purpose flour (1/3 cup)
•Filling:
• 100 g sugar (1/2 cup)
• 3 tsp cinnamon
• 1 egg yolk for brushing
Bake:
• Bake at 200°C (400°F) for 20 minutes
