• Dough:
• 250 ml lukewarm milk (1 cup)
• 20 g fresh yeast (0.7 oz)
• 500 g all-purpose flour (4 cups)
• 50 g sugar (1/4 cup)
• 75 g butter (1/3 cup)
• Pinch of salt
• 8 g vanilla sugar (approx. 2 tsp)
• Lemon peel (from 1/2 lemon)
For touring:
• 200g butter (7oz)
• 50 g all-purpose flour (1/3 cup)
•Filling:
• 100 g sugar (1/2 cup)
• 3 tsp cinnamon
• 1 egg yolk for brushing
Bake:
• Bake at 200°C (400°F) for 20 minutes
