Chicken Cacciatore Recipe:
4 chicken legs (thigh and drumstick)
1/3 cup extra virgin olive oil
7 cloves of smashed garlic
3 bell peppers mixed colors
1/2 cup black olives
1 1/2 cups chicken stock
1 28 oz can San Marzano Tomatoes
1 cup Chianti Classico (sub for pinot noir)
2 tsp balsamic vinegar
6-8 oz Crimini mushrooms
1 medium yellow onion
7 sprigs of fresh thyme
1 tsp dried oregano
1/2 tsp red pepper flakes
Salt and pepper to taste
Finely with olive oil, fried capers, and sliced parsley
Fregola Pasta Recipe:
10 oz fregola or another pasta of choice
3 tbsp olive oil
2-3 tbsp unsalted butter
1 1/2 cups salted pasta water
salt to taste

Whatever that was that happened at 5:33 was awesome!! Lol!! As far as the tomatoes, I started using San Marzano's about 5 yrs ago, now those are the only tomatoes I use. Brings every tomato sauce dish to next level awesome! This looks amazing!!

You are right there are many variations, but yours closely resembles mine. I add some finely chopped carrot and celery to the sofrito, (and sometimes I add them in slices, depending on the mood of the day) If I have zucchini in the garden I’ll add some sliced just before it goes in the oven, so they don’t get too mushy. I agree on the wine, I’ve done both, but I prefer red. If you want to take it up a notch, bread the chicken and brown it before putting it in the sauce in the oven. Any breading that comes off the chicken makes a delicious slop (for lack of a better word), and like anything with tomatoes, it’s better the day after.

Love your Rosemary Salt recipe. I add the kosher salt after the herb mixture is blended in my herb grinder. It makes it easier to gauge the saltiness. I can also use it straight, sans salt, for proteins that have already been salted and fridge chilled. It even works for lightly topping sweet desserts. Thank you for a great addition to my Mise en place.

Those simple touches like the smoked, roasted-peppers and fried capers make your version intensamente magnifico! I had a Turkish Guvech stew which has similar ingredients to Cacciatore excluding diced eggplant. It had roasted red peppers added and it made the dish smokey fantastic. Yours is next on my chicken dishes to make!

I went trick or treating in my cousins neighborhood one year when I was a kid and there were probably 6 bowls of various goulish substances. Peeled grapes were absolutely one of them.

We fill the pot with garlic oregano peppers and onions sliced thin with OO salt papper. Once it softens add sauce and diced chicken. DONE. Serve over rice. You literally need to fill the pot with peppers and onions. It's so amazing and healthy.

TDCC - a shorts video suggestion (or even a full-blown tutorial!) . Seasoning..what salts to use when and why. I've seen several of your videos where it looks like you use flaky sea salt to cook with (not finish with) and regular looking kosher salt. I've read and watched where the rule of thumb is 1/2 tsp per pound of protein vs 1 tsp per pound of protein. That is a BIG difference when using kosher salt! Great video and great content! Thanks for educating the masses.

Sonny! I can't remember which video of yours recommended Savora mustard but after months of trying to find it here in San Diego, one of the supermarkets across the street from me finally got some in stock and HOLY COW, it's freaking AMAZING! I used it on a quick roast beef sammich with swiss cheese, lettuce, red onions, tomatoes with ROSEMARY Salt and freshly ground pepper! Thanks for the recommendation!

I use capers instead of olives to add some nice saltiness. I also prefer white wine versus red in this dish, since there are tomatoes: lighter flavor. Also: the brown bits are fond

That's weird Sonny, my father worked in a morgue and at Halloween he took me to their parties. We got blindfolded too, but they had a dish of eyeballs for us to dip our fingers into, and they told us they were grapes ... (One or more of the above statements may have been exaggerated for comic effect!)

No gloves in my kitchen. I seem to be allergic to all of them, plus I need to feel my food and I can't with gloves on. Clean hands are sufficient. It's that human touch that makes our food so good. I made a Nashville hot chicken pizza for dinner, and had no recipe for the chicken nor any concept of pizza made from the chicken. After 65 years in the kitchen, it just comes naturally. I don't even care that much for pizza, but this was really good! Almost as good as cacciatore. 😊

Sublime, and the crispy capers are genius, but you should add three or four anchovies to the sauce at the very beginning... they’ll break down completely and add a complex umami layer to the sauce without it tasting “fishy.”
