Here's our recent dining experience at Pujol the 5th best restaurant in the world, for 2022!
We were so excited to dine at this restaurant, based off all the recognition and positive reviews it's received. The ambiance, design and service did not disappoint. We had a lovely overall atmosphere-based experience at Pujol.
In terms of the meal, we were left underwhelmed. Most of the dishes were one-dimensional and lacked excitement. The produce itself was notable and amazing, but the dishes, for us personally, lacked complexity and yummy deep beautiful rich flavours.
The exception to this was the Mole - it had everything we were hoping for! It was so complex, it was so unique, it was rich and soulful and a beautiful dish to experience and have the opportunity to taste. It really made the dinner for us!

I was at Pujol in 2022, and the funny easter egg was that Owen Wilson was a few tables away from us. The menu looks relatively similar to when I had it. Pujol standouts are the mole, the corn, and the churro. Those three dishes are what you expect to taste at Pujol. The corn with the ants is odd and a great start. The mole is a very complex mind f**k of spicy, smokey, spicy, and sweet. The flavors change like crazy every second your mind tries to process the taste, but it is very elusive to capture the flavor profile when it's changing constantly. The churro is the best churro I have ever had- it is light, fluffy, and crispy. It is probably fried in beef fat (the same idea as old McDonald's fries.) It beats Chuerria el Morro for the best churro. Great review of Pujol.

Totally agree with you! The mole was like nothing we’ve ever tried before, and layers and layers of flavours and complexity! It was our standout of the dinner. The corn and ants dish too, so unique and unlike anything we’ve ever tried! For us, the rest of the menu wasn’t as exciting and a bit more flat in profile. Funny you got to see Owen Wilson haha. What I loved the most about Pujol is the food reminded me of nothing I’m familiar with. We went in Feb 23 and they served this pumpkin tamale that just made me go 🤯 Then mole madre came and my husband actually got a little emotional tasting it. The mole with the Santa hoja tortilla was surely the most amazing, unique, one of a kind dish I’ve ever had; nothing comes even close in comparison. I found their fish dishes (cooked and ceviche) to be just ok. But for the tamale and mole, it was sooo worth it 😊

I’ve always wondered how these course meals actually fill you up. The portions are tiny. I understand why and that’s because the first bite is always the most tasteful. The more bites after that the less tasty it gets and more just feels like a chore to finish. Think a big burger for example. That first bite is amazing but once you’re almost done you feel like crap and are practically forcing it down. That’s why they give you tiny portions at fancy restaurants. But I just don’t understand how you walk away from a meal like that and not still be hungry. As you guys can tell I’ve obv never eaten at a restaurant of this caliber.

Haha, fair! Honestly, we're big eaters and love to eat a lot! What we find with fine dining dinners like these is the number of courses and the duration of the meal. Most of these dinners last around 3-4 hours... and with a bottle of wine, and eating for many hours straight, even if the individual portions are small, add up and definitely fill you up! It takes our stomachs awhile to realize they’re full so, normally with any meal where you feel like you’ve overeaten, it’s because you have and it took awhile for your stomach to tell your brain. With these meals taking 2-4hours, you’re slowly filling up. If you properly take your time with 7-10 course meals, you can definitely leave feeling satisfied

Its because they are rich as hell. Its also a bit more like seeing a broadway show, these dinners go for three hours, its the theater, plus, you get to eat.

Highly disagree--there's a reason Mexican gastronomy is a UNESCO intangible cultural heritage (which not many cuisines are--French and Japanese are the other 2). Mexican food is like Italian food--rustic. Relies a lot on what is native to the area, locally grown produce/vegetables, legumes, etc. There are quite a few inspiring dishes, they are just not made every day. Ceviche and it's variants for instance, are now made all over the world (there is healthy debate on whether this is Peruvian or Mexican, but there's quite a lot of variety of Mexican ceviche using native ingredients). The thing is Mexican gastronomy is very diverse. It's one of the world's first fusion cuisines. Oftentimes what you think is European for instance is actually native to Mexico--chocolate, vanilla, tomatoes, zucchini/squash, etc. Or ingredients used widely in Asia like papaya, avocados, and chiles, are also native to Mexico (and Mexico has a large variety of chiles found nowhere else). In addition to corn, tequila, etc. And because Mexico received European immigrants particularly from France, Italy, and Germany, during its 300 year period under Spanish rule, and later at the end of the 19th century, it also developed similar dishes and baking styles found in particular to French and Italian techniques. And Mexico also shares some complexity with French cooking when it comes to some Mexican dishes. Why bakeries are also common in Mexico. Mexico also received Middle Eastern immigration influencing some dishes. And ingredients from Europe and Asia were introduced centuries ago to Mexico incorporated into Mexican dishes--tamarind, mango, pomegranates, lemons, oranges, beef, pork, goat, etc. There's even debate on whether some dishes were originally Mexican or Spanish given that so many ingredients were taken from the Americas to Spain--as well as dishes. There's even encyclopedic tomes of Mexican cookbooks dating back hundreds of years ago. From home cooks to nuns. The native foods--even before the Spanish arrived, were already extensive. The indigenous civilizations grew a large diversity of fruits and vegetables and herbs found nowhere else (Tenochtitlan, the capital of the Aztec empire, for instance had one of the worlds largest outdoor marketplaces). Often pairing it with wild animals like turkey (also native to the area), deer, venison, rabbit, seafood, etc. So it's quite a misconception to believe the average Mexican doesn't eat inspired dishes.
