🥣Potato patties ingredients:
950g | 2lb | 3 medium size potatoes
350g | 12oz | 2 cups broccoli
3tbsp cornstarch
1/2tsp chili flakes
1tbsp nutritional yeast (optional)
1tsp Italian herbs
salt to taste
dairy-free milk
chickpea crumbs or breadcrumbs
oil for frying
🥣 Dip sauce ingredients:
100g | 1/2 cup cooked chickpeas
15g | 1/8 cup soaked cashews
1/4tsp curry powder
1/4tsp ground turmeric
1tbsp nutritional yeast (optional)
1 chopped garlic clove (optional)
salt to taste
1/2tbsp agave syrup (you can use maple syrup as an alternative)
80ml | 1/3 cup water
2tbsp lemon juice
🧑🍳Cooking tips:
❗Feel free to add your favourite herbs and spices to the recipe to get your favourite flavour.
❗You can substitute agave syrup for maple syrup.
❗ If you cannot find Korean chilli flakes gochugaru you can substitute it for crushed red pepper flakes or cayenne pepper.
🥣 Method:
Peel and cut 950g | 2lb potatoes
Place potatoes in a pot.
Add water and salt.
Bring to a boil and simmer until tender.
Disassemble inflorescences of 350g | 12 oz | 2 cups broccoli.
Place to a bowl and add boiling water.
Cover and set aside for 5 minutes.
In a bowl or food processor combine 100g | 1/2 cup cooked chickpeas, 15g | 1/8 cup soaked cashews, 1/4tsp curry powder, 1/4tsp ground turmeric, 1tbsp nutritional yeast (optional), 1 chopped garlic clove, salt to taste, 1/2tbsp agave syrup (you can use maple syrup as an alternative), 80ml | 1/3 cup water, 2tbsp lemon juice.
Blend until smooth and creamy.
Mash cooked potatoes with potato masher or a fork.
Grate broccoli florets.
Add grated broccoli to a bowl with mashed potato.
Add 3tbsp cornstarch.
Season with 1/2tsp Korean chili flakes (Gochugaru), 1tbsp nutritional yeast (optional), 1tsp Italian herbs, salt to taste.
ℹ️If you cannot find gochugaru, some alternatives include crushed red pepper flakes or cayenne pepper.
Mix until combined.
Oil your hands with a bit of oil and form potato patties.
Dip each patty in dairy-free milk than coat in chickpea crumbs or breadcrumbs.
Heat a little oil in a skillet.
ℹ️For oil-free version bake in the preheated oven 390F | 200C 20 minutes on top/ bottom heat or use water or vegetable stock for frying.
Place patties in a skillet and cook on medium-low heat with the lid on for about 7 minutes.
Flip and cook until golden brown.
Serve with amazing and creamy sauce.
