The "one one hundreth of my life" does not mean that Frieren/elfs only live to be a 1000 years. She meant that of the life she lived so far, which was over a 1000 years, that 10 year adventure with Himmel and the others was only 1% of it.

I feel like Frieren is aware that getting to know Fern will come with pain in the future. She already said it would not be worth training an apprentice because everything she teaches them would be gone as fast as they will. The other side of the coin is if Frieren invests in Fern emotionally she will soon be heartbroken again. Her making the effort anyway shows she is willing to endure that pain regardless, and that is why Eisen says she is a good teacher.

This is actually a really endearing way to showcase what might just be one of the differences between humans and elves. Fern is concerned that Frieren is wasting half her days away, but Frieren has as many days as she could possibly want, so what difference would it make if she oversleeps?

It's assumed the 10-year journey to defeat the Demon King was "to get there and back." The world was populated with more threats in the past and Himmel made his heroic imprint everywhere he went along the way. Probably won't take 10 years this time.
