So many women over 60 are still very active in their acting careers. The issue here is mission impossible caters more to a younger crowd (40s and younger, approx). It's an action movie, after all, and action movies aren't believable if the characters physically LOOK like they're 60. They need actors and actresses that "look" young. Tom Cruise and the leading actress look the part.
