Three great ways to use absinthe in cocktails - one you’ve probably heard of, one you might not know and then my own personal favourite!
DEATH IN THE AFTERNOON SPECS:
20ml (⅔ oz) absinthe
5ml (⅙ oz) sugar syrup
Around 100ml (3 ⅓ oz) champagne or sparkling wine
LA LOUISIANE COCKTAIL SPECS:
50ml (1 ⅔ oz) rye
25ml (⅘ oz) sweet vermouth
10ml (⅓ oz) Benedictine liqueur
3 dash Peychaud’s bitters
3 dash absinthe
Cherries to garnish
PAN AMERICAN CLIPPER SPECS:
50ml (1 ⅔ oz) calvados or apple brandy
20ml (⅔ oz) lime juice
15ml (½ oz) grenadine
Spray absinthe
Dehydrated apple to garnish (optional)
CHAPTERS:
0.00 - Introduction
0.32 - Death in the Afternoon
1.33 - La Louisiane Cocktail
2.57 - Pan American Clipper (my favourite!)
4.04 - Outro

I tried an absinthe/champagne cocktail once, and it was tasty, but oh man, I could feel the hangover after about the third sip.

Those last two do sound amazing! I've not had absinthe in a cocktail, only served with the sugar cube and water - I do enjoy it's flavors. I'll have to give these a try! Thank you!

Another great absinthe cocktail is the Momisette. Refreshing like a Tom Collins but with all the great things about absinthe!

Ms. Cara, every time that I watch your channel, you turn me onto something new. I have enjoyed Absinthe a few time and have enjoyed the first two cocktails that you made. However, this was the first time that I have heard of the Pan American Clipper. I am definitely going to try this one. You are a true Master.

Had the very same thoughts when I first tried Death in the Afternoon and La Lousiane. Pan American needs a lot of ingredients that I don't have ready at hand, but seeing you so enthused about it, maybe I should still give it a try. Great video by the way! Thanks a lot!

It definitely can be! I actually like it in autumn/winter as well cause as much as it’s fresh that apple/aniseed/pomegranate combo is nice and warming!

Pan American Clipper sounds like a Jack Rose with a spritz of Absinthe. And I love a Jack Rose!

Excited to see this. We made the LA LOUISIANE tonight. I like using Antica Formula vermouth instead of the run-of-the-mill red vermouth. There are other good substitutions as well. This was a very interesting cocktail.

For me the best Absinthe drink will always be the Sazerac. It's what brought me into the cocktail game, and I continue to love it to this day :) Knew the first two drinks already, and will try the Clipper as soon as I can :) One question though: Is it grenadine juice or syrup you're using in that one? It looks a little like juice in the video, but usually grenadine refers to the syrup ... thank you for those great ideas, and have a happy new year soon!

The Pan American Clipper was wonderful! Though the absinthe was mainly noticeable in smell but not taste. Personally, my favorite absinthe cocktail is the Momisette - I think it's a good intro to absinthe for a lot of people if you like the anise flavor.

Nice Absinthe dripper on the bar! I guess we’ll see that in action in the next video? I have that same bitters bottle for my Absinthe. I bought everything but a dripper to try Absinthe ($80 bottle, LaRochere glasses, spoons, sugar cubes) but now mostly use it for Sazeracs & La Louisiane. It’s good to see you making that classic. One of my favorites (along with its cousin Vieux Carre).

There is a deeper dive on absinthe coming and we did do the dripper but in all honesty we ran out of time in filming to do it justice probably!

I'm also quite a fan of the Necromancer cocktail (after reballancing it slightly from the version I found that used way too much absinth and just hidd everything else going on)

Hi Cara, I have enjoyed having a death in the afternoon, made to double your spec because of 200ml Prosecco bottle used for the fizz. Not fully kicked in yet but have told my wife I won’t have another drink until muck later! It was lovely. Nick from York

The Pan American Clipper sounds smashing. I'm a big fan of calvados/apple brandy. Would it be okay to use a dash of absinthe as opposed to a spray?

I'd guess that the spray keeps the volatile compounds closer to the surface more for aroma (and slight flavor). A drop or two would provide a similar flavor but likely a little less aromatic quality.

I love your videos! They are so well explained and so easy to follow. There is only one thing that kinda drives me nuts and that is the sound of a phone vibrating or something that regularly happens throughout the videos. An example can be heard @2:35. This annoyance probably says more about me than the videos, but it's my only criticism. Bingewatching the videos like a mad man after being bit by the home-cocktail bug. Keep up the awesome work guys!

Hey pal, so glad you’ve found them useful! I’ve driven myself crazy listening to that part with the sound up to see what you mean haha, but I’m still not sure- is it the actual little noise which sort of sounds like a ring tone cause if so that’s part of the music? Otherwise maybe a tram going by in the distance? We don’t film in a sound controlled studio, just a regular restaurant in a busy suburb so there’s often noises we can’t control and while we’ll start again where there’s anything too drastic it’s impossible to do it for every little thing. Promise we all keep our phones on silent haha!

The first time making the pan American I got confused and reversed the lime and grenadine quantities, and it was a way worse drink. It's amazing how much of a difference+5ml gren and -5 lime can change a cocktail.

I’ve never struggled too much but I suppose it depends where you are- Calvados is usually pretty easy to find around Europe and Applejack is popular in America but yeah, outside of there might be trickier…

It’s definitely similar to both! Just because it uses vermouth and a liqueur as the sweetener rather than just sugar as in the Sazerac, so can be seen as the whiskey/fortified wine combination of the Manhattan, plus it’s usually served in a coupe glass rather than a small rocks but it’s sort of like the two had a baby I suppose haha!

Truthfully, I'm a bit surprised at the limited role absinthe played in the second and third cocktails...a few dashes or a couple of spritzes are less of a player than I expected. However, having just read the title again and given the video is about "ways to use absinthe" as opposed to "absinthe cocktails", I'm guessing the miss is really on my end. :-) Glad to see you back posting!

Try a La Louisiane. 3 or 4 dashes of absinthe is plenty to make itself known. Delicious.

Being an extract, absinthe has very often been used sparingly in cocktails because it's such a strong flavor. If you look at the Savoy Cocktail book, there's over 100 recipes that call for absinthe, most in the form of rinses or barspoons. But just like bitters, it can add a huge amount of depth, even with that small amount.

Hey Cara, I love a Sazerac and would like to make the Louisiane, but I don't have Benedictine....nor do I know what it is lol Is it expensive? And are there maybe some replacements I could use?

It’s a French herbal liqueur, sort of tastes like a cross between Chartreuse and Drambuie haha! I wouldn’t stress about buying a whole bottles, it’s not crazy expensive but no point if you won’t use it much! Try and introduce that herbal note through something else you have, maybe a bitters or an amaro?

Benedictine is necessary for a number of New Orleans classics. You can get it in 375 ml bottles, which helps if you don’t use it. Confusingly they sell a popular product called B&B - Benedictine & Brandy - which has a very similar bottle but is NOT the stuff needed for cocktail recipes. I’ve heard that Benedictine is more popular in the USA than its native France. It’s fairly easy to find (or order) at most quality US liquor stores.

Great video as always. If you're looking to verify any information about absinthe prior to final production, I'm always happy to help. There's a ton of misinformation out there, as I'm sure you know. I run the Wormwood Society and have been researching, drinking, and reviewing absinthe for 25 years.

To me the Pan American Clipper actually seems more related to the Jack Rose Cocktail, than to the Sidecar.

It definitely is! Was just suggesting well known cocktails that this is a good alternative for 😊 there’s another, slightly more in depth one coming in the Clipper that goes in to the Jack Rose connection more!

@@BehindtheBar Well, as a fan of the Jack Rose, the Pan American Clipper is the next new cocktail I'll try making! On another topic, it would be nice if you did a full episode about the Martinez. I've been fooling around with different styles of gin (old tom vs. genever vs. London dry) and different proportions to build the cocktail, and perhaps something in that nature could be an interesting and fun episode.

Even a Sazerac only has an absinthe rinse and I wouldn’t say anyone wouldn’t call that an absinthe cocktail! It’s such a strong flavour it definitely carries through enough to be a notable part of these drinks 😊glad you liked the recipes!

As the owner of the world's largest absinthe education organization, I would say absolutely. Absinthe's flavor is so strong, a little goes a long way. And even a little can 100% change a cocktail.

The people are unanimous... Going over it again you sprayed a good 3 times which is more absinthe than what a Sazerac recipe or most things similar use, as you say. So on second thought it definitely belongs on this list.
