Vegetable Omelette
Ingredients:
3 eggs
50ml fresh milk
20g diced onion
30g sliced mushrooms
30g diced tomato
20g minced cauliflower
1 small piece of unsalted butter
Seasonings: a pinch of black pepper and salt
Instructions:
Heat a pan, melt butter in it, and stir-fry the diced onion until fragrant. Add sliced mushrooms, diced tomato, and minced cauliflower, and stir-fry until cooked. Remove from heat and set aside.
Beat the eggs in a bowl, add a pinch of salt and pepper, and sift the mixture. Add fresh milk and mix well.
Heat the pan again, add some oil, and pour the egg mixture into the pan. Quickly stir the eggs until cooked and evenly spread in the pan.
Put the cooked vegetables on top of the eggs, fold the omelette in half, and transfer it to a plate.
Soft-boiled Omelette
Ingredients:
4 eggs
20ml fresh milk
1/2 tsp salt
1 bowl of fried rice
Instructions:
Beat the eggs in a bowl, add fresh milk and salt, and mix well.
Heat a pan, add 1 tablespoon of oil, and turn the heat to medium-low. Pour the egg mixture into the pan and quickly stir the eggs until they start to set.
Gently fold the edges of the egg mixture towards the center, forming an oval shape with a soft-boiled egg inside. Turn off the heat.
Place the omelette on top of the fried rice and gently cut open the center of the omelette, letting it spread over the rice.
Formal Dress Omurice
Ingredients:
2 eggs
1 bowl of fried rice

Instructions:
Beat the eggs with salt to make egg mixture.
Heat up a pan with some oil, pour in the egg mixture. Use chopsticks to create ripples by stirring from the edge to the center. Then rotate the pan to make a spiral shape. Cook until the egg is half set.
Place the cooked egg on top of the fried rice.

Instructions:
Separate the egg yolks and whites into two bowls.
Add a pinch of salt to the egg whites and beat until stiff peaks form.
Beat the egg yolks with a pinch of salt and black pepper until light and frothy.
Gently fold the egg whites into the yolk mixture.
Heat a non-stick frying pan over low heat and add some butter.
Pour the egg mixture into the pan and cook until the bottom is set.
Transfer the pan to a preheated oven and broil until the top is golden and puffed up. Serve immediately.
