Join me as I share some tips and tricks to making yummy strawberry jam with natural fruit pectin.
Update: One error I noticed in the video after uploading is that I mention sealed jam only keeps up to two weeks in your pantry. That is incorrect. It will keep up to two YEARS!

Great video! This will be my first time using Pomona's pectin and I am so glad you were thorough on explaining it. I don't like my jam super thick and I was glad that you addressed that you can use less of the pectin...

I made some red raspberry jam last week with Pomona's and it turned out great. I used 50% sugar.

So you measure your strawberries AFTER mashing them? I want to try the Pomona but haven’t yet. I did make 3 batches of strawberry jam already this year. My last batch separated in the jars? Why. I used low sugar pectin in all three batches.

Yup, we measure the berries after they are mashed. The separation in the jars does happen for us sometimes too. It happens when the chunks of fruit are a little bigger... with more air in the chunks of berries, they tend to float to the top of the jar. You can solve it by mashing it finer or waiting until the jars are partially cooled and then shaking the jar gently to remix the berries with the jelly. Good luck with your next batch!

I actually mix the pectin into the sugar. If you are thinking about the calcium water, that I put in right with the fruit when I start the whole process.

I read or heard that Pomona's does not expire. Is that true or false?

Hmmm.. hadn’t heard that. We simply use ours so fast it doesn’t have a chance to expire! I did double check their website though and they say it is shelf-stable and keeps indefinitely when stored in a cool, dry, air tight container.

During covid when the scare was at its peak and lids, pectins & yeast were scarce many including me purchased a box or two more than we needed at the time and it seems many folks are now throwing away all of their expired pectins (Certo and sure jell mostly), fortunately, I only had one box that had expired by one month in July....and at over $7 a box I used it anyway based upon a reading that they can be good up to 18 months after expiring so long as they were stored at cooler temps (not sure what cooler temps exactly is) ...my house is always somewhere between 68 and 78, it set up just fine... can't say I wasn't worried though, since there is a lot of mix messaging on youtube and google about the subject. I did run a test on expired gelatin pudding mixes that I kept in cold storage at 47 degrees and so far so good on that but not on any flavored gelatin. It will set but not firm and the flavor is off. The generic brands will just harden up when it is about to expire by date.
