3 cups cooked jasmine rice
14 large shrimps
4 slices galangal
3 stalks lemongrass
4 kaffir lime leaves
2 red chili peppers
1/2 cup diced onion
1/2 cup diced tomatoes (seeds removed)
2 tablespoons chili paste
3 tablespoons evaporated milk
2 tablespoons fish sauce
1 teaspoon sugar
1/4 teaspoon salt
3 tablespoons lime juice

Thank you for explaining the difference between galangal and ginger! I haven't had galangal yet, but have seen it in many recipes that i've been wanting to try. Thanks for this recipe. Keep it up!

Just a lil' bit of info on Galangal... Here where I live in Hawaii & where both ginger & galangal are readily available, galangal is known to be just a bit more floral & has a slightly higher natural sugar content. So it does in fact have a more cooling effect then ginger would. But also commonly known here is that they can he easily interchanged with only a slight modification to existing recipes. Just use about a quarter to a third less, of the amount of ginger as u would galangal & "if necessary" add a small pinch sugar to sub & then adjust as needed & U should still have a similar/decent representation of how the galangal would taste in ur recipe. That looks so yummy! I just had some Thai fried rice that had pineapple and cashew nuts in it at a local restaurant. It was very good.

This looks really delicious. 👍 My very first meal when I visited Thailand was fried rice. Very simple/plain compared to yours but hit the spot. Excellent video as usual.

There are so many different types of fried rice in Thailand. My Cameraman (hubby) laughed when he saw "American Fried Rice" on the menu... it includes a hot dog and an egg. Of course, growing up in Thailand, we always just assumed that "American Fried Rice" was what Americans ate. It wasn't until I came to the US that I realized there is no such American dish. hahaha!

That looks crazy good. I've looked for Kaffir lime leaves before and couldn't find them.

Thanks for the compliment. I am lucky because I have a kaffir lime tree growing in the backyard, so I can get limes or leaves whenever I need. Before I had my own tree I had to buy them from Amazon... here is the link in case you need them amzn.to/2nTB8ui

Spoon Fork Heart I love panang curry, crazy about it. Northern-style kao soi / noodles in red curry, amazing. I have made many a dinner out of satay and rice, particularly moo ping / bbq pork skewers with various sauces. Pad kee mao and pad see ew filling out the other two. but that doesn't even cover everything... just so much good stuff.

That pineapple fried recipe is very similar except it had chicken and no Canadian or American bacon. It looks like it would be very good! Thanks!

That looks amazing, Siri. I never had Thai fried rice. Ill try for sure. Hey for your Mortor and postal, how do you clean to keep flavors from lingering from ne dish to another? I'm sure not with soap. Can you clarify, please?

HI Greg, thanks for the great question. I just clean mine with hot water. But I do have more than one. I have one that is course, and one that is very fine, and another one that is somewhere in the middle. I have seen people use soap, but I don't. I just use hot water.

Oh, also.... can add a little lime juice if you want to really flush any hard smells from it.

Looove ur fried rice recipes! & this one looks amazingly delicious. Can't wait to try this one out on the fam & watch the wifey try not to sweat from all of the chili in it - Lol. & props to the cameraman/hubby too!!! I dunno how u manage NOT to jump into the shot & just start devouring everything in sight (before the vid is finished). Haha, I'd be ruining every take, just having to watch & smell all that amazing food being cooked ;) lol

Hi Siri! I have question. I plan to make this recipe, however for the galangal I have store-bought crushed galangal in a jar, and I also have dried kaffir lime leaves. How many tablespoons of crushed galangal would you recommend?

I have never tried it with crushed galangal, so I am not exactly sure. But it would be safe to try maybe just 1 teaspoon. It goes a long way.
