Tortang Talong | with Canned Corned Chicken 

Hello friends! Sharing a new Tortang Talong (Eggplant Omelette) we recently cooked at home. We don't usually buy Canned Corned Chicken, but we have it in our cupboard since this is part of the Christmas Basket from our local government. We thought that this is an opportunity to consume this canned good since it seems like it will go well if we use it as the meat in Tortang Talong (Eggplant Omelette). It did not disappoint, it surely goes well with the talong (eggplant). Maybe we might as well include Canned Corned Chicken in our grocery list when Tortang Talong (Eggplant Omelette) will be part of our meal plan for the week 😃.

3 eggplants (grilled and skinned)
1 canned corned chicken (small can)
1 chopped onion
2 eggs
liquid seasoning (optional)
