That sounds unrealistic. I'm at JNS in Denmark at the moment, and we have 5 Wakui 240mm Gyuto's and 5 210mm Gyuto's. All in the right proportions and dimensions. A 240mm Gyuto being 9mm less tall than a 210mm Gyuto sounds impossible. Crazy. Not that I don't believe you, but it sounds improbable.

@@chefknivesenthusiast Different batches. I also got 2 Sujihiki one is like 3,5cm tall the other one like 4,5.....

Those are serious inconsistencies. I've never heard about this before when it comes to Wakui. Maybe the ones Maksim from JNS receives are always perfect, and other vendors get the lesser blades. 🤷🏽‍♂️

All Workhorses, all from JNS, but no issue with this, a reason more to buy more then one ;)@@chefknivesenthusiast
