ISSHIN is one of the most popular Toyama Black ramen restaurants in Toyama, and may be perhaps my favorite Toyama Black ramen! It is located near Toyama JR station. There will almost always be a line. I was there at 2pm and there was still a line! Just sit in order at the waiting area. There will be an English menu to instruct you on how to order from the vending machine. If this is your first time, order the Toyama Black ramen. Ticket 3 is just Toyama Black, Ticket 2 is with an egg, and Ticket 1 is with an egg and extra charsiew. I recommend Ticket 1 because the charsiew is some of the best I've had in a ramen shop. You could also order broth flavored with dried sardines, or miso, or spicy miso, but ISSHIN is famous for their Toyama Black ramen. The broth is addictive, but not too salty. The noodles are thin but al dente firm. The charsiew is amazing! The chicken breast is so tender. The pork shoulder is so flavorful. And the pork belly melts in your mouth. The scallions, onions and seaweed add an extra umami when you incorporate them into your bite, to change the taste along the way. And the consistency of the yolk of the marinated egg is just perfect!l ISSHIN is a treat for ramen lovers! @TravelWhiskers @TastyWaterOM
