In this video Laurie tries another ready made pizza dough from Trader Joe's. Laurie uses Trader Joe's Plain Ready Made Pizza Dough which comes in a 454 gram (1 lb) bag. Laurie walks through getting the ready made pizza dough out of the bag, pressing it out into a round, and cooking it in our Ooni Koda 16 outdoor pizza oven.

I've had good luck with TJ's dough, having used it in our electric oven with our pizza steel. Wanting to try tucker's idea of treating it as fresh made & give it some fermentation time. All the possibilities!

They said the 16 wouldn't ship until November. I found a dealer that could only get the koda. So I placed the order. Another dealer called back and had 3 koda 16 in stock. I called the first one and canceled. He was ok with it because he knew I really wanted the 16. I pick up the 16 tomorrow.

Appreciate your videos I make my own dough, however I get TJ’s dough as well. What I do is treat the dough as if I had just mixed it. I whole ball it and let it room temperature ferment for 12 hours. Then cold ferment in the fridge for 48. I make it into balls and freeze for emergencies. The fermenting process allows flavor to develop just as with home made Thanks Michael

Strong In Retirement Exactly what I do I freeze the three day fermented dough in guard sized zipper plastic bags. Each around 250 gems. Take out night before or morning of when I intend to use them Either defrost overnight or on the counter, put in Fridge, and take out several hours before stretching etc Now I need to decide if I should get the Koda 16, since I have the Pro🤷🏼‍♂️🍕🤯 Heck, I am retired as well. Might as well spend my money, vs letting my urchins waste it after I am gone. Lol 😂 Both of you stay well!!!

@@tuckerdog991 I canceled my order for the pro and ordered the Koda 16 instead. Unfortunately I have to wait till November for it. I could have gotten the pro early October but I really didn't want to use wood or briquettes. I already have an Ooni 3 I've never used. because it's too hot here to stand outside in the summer for feed those pellets and too cold and wet in the winter. The 16 with gas if exactly what I need. Plus I like the way the burner comes in on two sides, because that seems to be more like a wood burning pizza oven that my son has.

@@tuckerdog991 newbie here.... so when you use the tj dough after the 3 day process, how many dough balls do you make to freeze from one tj bag? i have a 12" oven and tried this once with the tj dough but it was much too thick for my taste. appreciate any advice. My whole reason for purchasing is to take the oven camping and have fun!

@@sapacarlson6766 Many stores sell dough, so you might want to experiment. My key point is that I treat dough I purchase as though I just finished the initial mixing. I follow the instructions on the baking Steel website, for their 72 hour dough So I put the purchased dough in a lightly oiled bowl. Cover and let rise on the counter for about 12 hours. You might see that listed as “RT” fermentation. I then put the bowl in the fridge for 24-72 hours. Hopefully at least 48. Dough is still in the bowl. When ready to cook or freeze, take the dough ball out to a floured table. Divide the dough into about 250 Gmail pieces. I then make dough balls. Dough is easier to ball when cold. If cooking I leave them out for 3-4 or so hours, covered. Rom temperature dough is easier to stretch. Or I put them in lightly oiled plastic bags. Squeeze out as much air as possible, and freeze. Check out baking steel website and RU-vid videos for great instructions on each step. Have fun 🍕🍕🍕

The 6 foot rack is 18 deep by 48 wide. We bought a remnant piece of plywood 24 inches deep x 48 and made cut outs to fit the rack. We adjusted the shelves so the Ooni is at Laurie's eye level. She is almost 5 feet tall and I am 6 feet. The rack is on casters so we can roll it in and out of the garage. It works great. We already had the rack so just added the plywood. I am glad you liked it. Bill.

We use a Uline storage rack for our Koda 16, pizza peels and accessories, and gas tanks. It is on caster and we roll it in and out of the garage. It is secure there and keeps it out of the elements. Thanks for watching and sending a question. Laurie.

Great video. Here is the deal with store bought dough. I hate to say this, but some of them are really good and for a split second, you question the point of making your own dough. To me, the challenge of making the dough is fun and I am at the point where my recipe is awesome. The thing about store bought dough is the following: 1)Ingredients: Store bought dough usually is loaded with additional conditioners and ingredients (sugar, etc..). You have no idea how much yeast they use or the hydration. Also, many contain oil which can cause the base to burn prematurely. Finally, the flour they use is malted which has a higher sugar content which is not good for Ooni ovens. 2)Size: Its much more difficult to gauge the amount of dough you need to use to make your pizza. Sometimes the store bought dough doesn't rise. Next time, Laurie may want to try to use half of the dough ball, instead of trying to stretch 1 lb of dough thinner.

rbiv25, you have so much knowledge about pizza dough and pizza-making. Thanks for sharing. I briefly read over the TJ ingredients. It contains malted barely flour and olive and canola oil. We turned our oven down and that helped reduce burning. I do enjoy making pizza dough and will continue to experiment with various techniques. 49er Minded, it has been a long time since we had the Whole Foods dough so I am going to judge by ease of use. We had positive comments from others on Safeway and Trader Joes. Based on workability I prefer Trader Joes. I know it doesn't answer your question exactly but I hope it helps. Laurie

I wonder if you've tried dough balls by Lamonica? I've seen their frozen dough balls in a number of food distributors. And I wonder if Lamonica is making TJ's dough balls.

I am unfamiliar with Lamonica frozen dough balls. We are in California. Where are you located? Lamonica may be a regional brand. You are probably right about how TJ dough is shipped. Probably a frozen ball is put in each bag, allowed to thaw, then the dough blooms in the bag. Interesting. Laurie

@@TwelfthAvenueCuisine I'm just north of you in Sausalito. I did find Lamonica is making frozen dough balls in Whole Foods (but some WF make their own dough as well). We tried TJ's and it was really good (lacked flavor vs homemade) but the texture was decent (split the 16 oz ball into two 9-10" pizzas for our Roccbox). Thanks!

We tried the fresh pizza at our local WF. It was Terranova made in Brooklyn, NY, I believe. It is sold in the refrigerator case near the place where they make the pizzas for WF. It makes at least 2 personal pizzas.

what kind of salami/pepperoni has anyone used that is not too oily/greasy for this oven? My Koda 16 is coming in a week or two after a very patient wait of several months. I am in NJ, US. I have been practicing on a steel pizza pan in a 525 degree oven (which is the max my indoor oven will go)

Most pepperoni is 30% fat. I have used some hormel lean pepperoni. Its about 15 - 20% fat. Talk to your local butcher

We have been using the Hormel Pepperoni. It appears to be less oily.

Hi Brad. My suggestion is to skip the pepperoni and use a hot or mild soppressata. If you are in NJ, you will be able to find a decent quality one in your local supermarket or a good Italian deli. IMO, it's a better quality product than pepperoni and to me, is better on pizza. If you are going to be making Neapolitan pizza in your oven as traditional as possible, then skip the pepperoni.

So I've tried two attempts at pizza dough. The first was home made, it failed. The second was trader joes. The latter has been a disaster. I watched your video a few times, and I made sure there was plenty of flour to make sure it would slide off. But it ended up folding into a giant calzone in my outdoor pizza oven. And it's a complete mess - I'm running it at full temperature trying to clean it off - it really has caked the ceramic with cheese. I don't even know if I can fully incinerate it (I'm using the Roccbox). With the trader joe's I did an hour covered to let the dough get ready to be cooked before stretching it, forming it, then adding the sauce and toppings. But I can't seem to figure out a way to get either home made or premade (but not precooked) pizza crust to work. I had a Pizza Pronto prior, and always bought the precooked pizza crusts, but I've been trying to move away from that because obviously pizza dough that hasn't already been cooked will taste much better. Both of my prior failures were in trying to put the dough into the outdoor pizza oven but the first one caved (my first attempt at making my own), and the trader joe's just rolled over and like I said - it's an absolute mess. I'm definitely an amateur at this (though I do make my own sauce). Hoping I can get the ceramic clean, ugh. Nothing on your end, btw, it's just it's been frustrating - and again, the last attempt failed miserably.

Oh, and in a follow-up, the incineration phase has removed most of it, but now it's covered in black residue. I've turned it off for now. Any ideas how to clean it from this phase are greatly appreciated.
