In this video I'm taking a look at a famous traditional French knife. The Laguiole was born in 1829 and is deeply rooted in the culture of shepherds, farmers and cattlemen in the region around the small village Laguiole in Southern France.
My Laguiole knife is from the renowned manufacturer "Laguiole en Aubrac" and was crafted from start to finish by a single cutler.
For further information take a look at these websites:

very interesting. its very nice to have a single cutler finish a quality knife. its almost custom to have the cultery engrave his own mark. and the card included showing the different makers is too sweet.

About "the fly" : It's definitely not a fly but a BEE. Even French people like me got confused. In traditional knife making we name the metal part on the top of the spring "Mouche" which is "fly" in English. It have been used for centuries as a part of the mechanism to lock open the blade. It was just a simple coin shape piece of metal. Around the end of the 18th century, the Laguiole knife (forget the "G" and "U" and prononce LaYOle if you want to sound "connaissor " and authentic), started to move from an humble paysan knife to a more luxurious item and began to have decorative "mouche". The first motifs used to be flowers or shamrocks sculpted into "the blade spring brake". But "The Bee" design only happens in 1908 as a signature for this type of knife. Napoleon and his victories were gone for ages so far ! This celebration story is only an urban legend that have been spread for marketing purposes over the years. Hope that feeds anybody's interest and curiosity.

@MultiEliaz Please remember that most Laguioles are slip-joins so it's not fair to compare them to let's say a Spyderco Manix. It all depends on your EDC needs. Fontenille Pataud produces Laguiole knives with a lockback.

Lovely video. Like the Leica pre-M cameras these knives are, to my opinion, more ergonomically satisfying than many of their modern counterparts. They do indeed find a natural place amongst the essential French picnic components of baguette, saucisson sec, cheese and of course the inevitable Bordeaux. The Pataud version with the stop and the lock seem to be sensible design developments but my mind is conflicted on the corkscrew addition. Once again thankyou for taking the time to prepare such a comprehensive introduction.

@knucklesdragon4040

Shape and overall look reminds me of a fishing knife. While the fishing knife has no back lock. the handle shape is a sure grip for wet hands and the knife has an additional blade used to scale fish and remove hooks. Looks as if the fishing knife is patterned after the Laguiole. Fun to see how knife designs have been modified for different uses.

A terrific reveiw of a great knife. However, I have the inferior model and I am pleased with it anyway, even though the bee symbol is welded on and the blade is stamped. It came well packaged with the certificate inside the box, Coutellerrie Laguiole Actiforge. Made in France. The blade is 12 C 27. Incidendently, this blade is stainless steel and cannot be forged. It is stamped as the one in your video would have been too. C 100 is the material that can be forged so I have read. Best regards, Ray

I recently purchased three laguiole knives from what are said to be three of the big names in laguiole style french knives.. One form forge de laguiole, one from Fontenille Pataud and one from Laguiole en aubrac. I received the one from forge de laguiole today, and although it was a nice knife over all, the fit and finish were lacking. It wasn't the quality finish that you would expect of a knife at that price point. I'm anxious now to see if the other two are of any better quality.
