#durian #tempoyak
Personally not a fan of durian, but when you ferment these pungent king of fruit, you can turn them into this amazing fish dish with flavourful broth.
The actual recipe calls for catfish, but I am using Spanish mackerel instead as there were no catfish available.
Tips:
1. Use any type of durian, fresh or frozen.
2. DO NOT use durian if it has signs of mould after fermenting.
3. Other substitute for catfish is cod, haddock

Ingredients:
Fermented durian:
3/4 durian flesh (fresh/frozen)
1/2 tsp salt
Fermented durian & fish:
3 pcs spanish mackerel
2 red chilli
5cm fresh turmeric
1 bunch vietnamese leaves
3/4 cup fermented durian
500ml water
1 tsp salt
