I just learned the other day if you mix one egg white with the salt for the top it will form a paste which makes it easier to spread on pork belly. When it is done cooking the salt will lift up in one piece which makes it easier to remove the salt crust.
Tried it twice when in Malaysia and came back home and recreated it, sadly the eggs here, even the premium ones have the eggy smell 😪 The ones in Malaysia had zero egg smell
