Hi! I'm Harry Soo, a Grand Champion pitmaster from in Diamond Bar, near Los Angeles. Welcome to my vlogs, BBQ product reviews, travel & lifestyle videos, BBQ contests, classes, as well as interviews and stories.
On weekdays, I'm an IT nerd living a Dilbertesque existence in a fabric covered cubicle in downtown LA. I'm the head tour guide for a team of IT project managers who build datacenters, networks, servers, and infrastructure that helps bring tap water to 300 cities and 20 million residents in SoCal.

My shtick is I've used a humble 18-inch Weber Smokey Mountain smoker to win 100+ first places and 1st place USA in the Kansas City BBQ Society (KCBS) awards including best chicken, brisket, and sirloin; and I've won over 30 Grand Championships. I've personally taught 250+ classes and trained 4,000+ pitmasters in small hands-on dozen student classes in the US, Sydney, Perth, London, Kuala Lumpur, Ireland, Germany, Mexico, Canada, and Hawaii.
I get many questions weekly about how to grill and barbecue. Since I started cooking professionally in 2008, I've answered thousands via email, so I decided to post my answers via video to reach a wider audience. I know I've asked what I should smoke, after I got your all purpose and chicken...BUT my step father is a cali guy....he found out and bought 9lb tri tip...I'm watching all these videos... any last TIPS...to the tip of this...cause I'll prob be "home" for 3 days...and he will be home for the day before I leave.... I do it all the time with prim chuck comes out supper close. I like smoked tri tip but i am the only one at my house they all want it cooked to 125. thanks for a grat video..

@@SlapYoDaddyBBQ thank you for wishing me good luck. I didn't have my fishing canopy on the boat when you visited, takes up to mich room with 3 people in the boat. But for fishing on the Columbia by myself or one other person I put the top up and have the heater going. Very nice and warm inside. But the storms winds are kicking up 4 to 6 foot waves. Not fishable. But this weather will hopefully change soon. Then I should be able to get out a few hours a day before work and of course during the weekend. Looking forward to seeing your next vid.

Thanks for you videos, I would like to give a sugestión on Tri Tip I f you leave the fat cap on it it will give you a litter diferente flavor but it is not the same as brisket I am not a Pit master like you but here a my house I cook every Saturday for my family and friends and I had impressed them with your receipts Thanks again Harry for you videos God bless you and your family

Yes, may work. I did an 11 episode on tallow and will try what I learned about lard being the best on tri tip.

Celery seed is strong, but I started using it in my rubs and it does really add a whole new dimension to the bbq. I'm surprised it doesn't burn up like a lot of other spices. Great addition!

Tri-tip is not a low and slow type of meat, for those size of tips you should only have it on the grill 3 hours. Tri-tip actually gets tough if you leave it on the grill for too long.

If you cook tri tip like a brisket, it has the facsimile texture of the brisket flat

I would bet that faux tri tip burnt ends would equivilant to brisket flat burnt ends. Hard to beat the brisket point marbling. Tri tip cooked like a brisket is awesome. You get the credit.

Thanks for this video! I thought about doing this and now you saved me the time. I tried the chuck roast burnt ends and me and the family did not like them. They were very dry and chewy. Probably for the same reason as this fail...not enough fat. Can burnt ends be made from the brisket flat?

Yes you can and it will generate a 3-hour argument and Jerry Springer fist fight. In Texas, it's probably a high crime to pass the flat as burnt ends!!!

I usually have to go to the butcher to get tri tip. Just last week Christina's store had some in and I picked up a couple. I left most of the fat cap on and smoked them over post oak until 130° then reverse seared them. Interesting experiment though. Have you ever tried making faux burnt ends from chuck roast? Seems like that might work better. Look forward to seeing y'all soon. Definitely interested to see how your TLH experiments are going!

I use this method all the time. I mostly use prime trip tip from Harris ranch and it comes out so juicy and tender. As good as a brisket. I call it a frisket. Typically only takes 6 hours

Never had much luck with this cut but Costco has tri-tip in prime grade. Going to try a slower cook with a better a grade and see what happens.

Hi Coach, while this is something that I would never do when grilling tri-tip. . . perhaps picking up un-trimmed and leaving a bit of the fat cap in place to render would provide different results. Also, I have found that spending the extra money on prime for tri-tip especially is well worth it. Cooking to medium rare does not allow for the fat to render, so I always remove it. I commend the effort and that you really cooked it like a brisket. Thanks again Coach!

WTF literally 2 weeks ago I was in the predicament of wanting burnt ends but no time for a 12hour brisket so used a tri tip. Not the same but satisfied my craving. This is not the first time Harry , got keep me eye on you from across the pond

Chop that tri tip up into much smaller chunks and use it to make a chili, 50/50 ground beef/tri tip. It (not surprisingly) works fantastic. Ive tried 100% tri tip as well but found it needed some ground beef to give it a bit of that traditional chili texture.

I can try and let you know. I have not tried injecting a fat into the brisket muscle. Tallow is solid at room temp so I have to heat it up first. It may be a fun experiment to do as I have a lot of beef fat from trimmings I can render myself

@@SlapYoDaddyBBQ ,that talon idea actually worked unexpectedly great when I injected 2 individual breath weighing over 10 pounds a piece with bacon grease. I figured if fat is flavor and the moistness we all love comes from rendered fat,why not shoot the breaststroke up and see if it helps..Side note please use a quality injector cause you want the talow to solidify within the cold meat and then come to temp as you cook it. I also added my rub to the talow when it was warm and let that solution hard before injecting. Sorry my message is long,but my bacon grease idea turned turkey haters into turkey lovers
