Danielle visits the Pacific Northwest to learn about the elusive truffle, and their importance to the forest. She forages for wild, native truffles with Alana of Truffle Dog Company, and visits Cartwright Trufferie to explore cultivated Perigord truffles. What’s fascinating about this fungi is their unique aroma and the way it changes your perception of taste in common ingredients. Danielle and Simon cook with truffles in a variety of ways. Inspired by her trip, she takes what she learned back home to Texas and applies it to other common mushrooms.

That last little tip about using dehydrated mushrooms as a ground coating for venison steak nearly made my heart stop. That's going on the menu immediately. Great episode!

Any outside activity you can do with your doggo best friend is a good day out in my humble opinion! I love watching a trained dog "Work"...the joy they get from "Doing a help a do" is the best thing ever!!!

The crazy thing about it is you're already out there, likely with a dog... Why not forage while hunting/fishing? If there's a trail to/from a trout pond, take the dogs and do both. The separation of the hunting, fishing, and foraging to me seems odd. I do them all at the same time.

l love how they show the passion for food and harvesting, hunting and fishing. how u can go out and get your own food, ether its hunting for meat, seafood, veggies and berries or mushroms.... just love that life style

As an avid mushroom hunter, truffles are the ultimate pinnacle to aim for! Some day!😊. Still have plenty of more common fungi on my bucket list(lobster, cauliflower, etc.), but truffles are the ultimate!❤

Watching you eat the Truffle Bread Pudding made me want to cry because it looked so good. What I want to know is that liqueur on top of the picnic table you and Alana are sharing infused with truffles too and where can I get a bottle? Lovely Video.

Here in Oregon they are so close to the surface people would use only rakes to find them. Which is illegal if not on private land. I am in Eugene OR

@@ba1050 That seems reasonable and typical to me as compared to where I live. As long as it's not banned to harvest (within reason) natural resources and not commercialized, I wouldn't have any issues with it.

It's additive, not replace. You're a dummy if you spruce/sooty/blue grouse hunt and don't look for sheds and shrooms and squirrels while you're already out there. Or do I have to wardrobe change first? Sprinkle some truffle oil on the grouse, next-level. Duck/goose fat + truffle is where it's at.

“..empower us to develop meaningful relationships with the ingredients on our plate..” It's for hippies who shop exclusively at whole foods, but want to know what/where/how the food gets to the stores and secured supply chains. For example, look up a kuiu/sitka hunting pouch, then go look for a "foraging pouch" and then tell me how much a grocery bag costs - because they all do the same thing...
