I've always wanted to cook at Truth BBQ in Brenham. It's one of those locations that have a true barbecue feel, especially being in the middle of nowhere off the the highway. Hope you all enjoy.

Money appreciate it. Just wanna show the hard work and the hard working ppl behind something ppl consider to be simple good. It’s not easy to make, and not cheap to make either. And I also just love cooking and talking barbecue. Haha.

thanks! not sure what brand but we use 16 mesh black pepper. i dont work there anymore so you'll have to ask them. haha.

At what point do you add the foil to the corners of the flat? I would really like to try this to prevent that corner of the flat from being burnt. Thanks joe

There’s no right time to do it. It’s just usually before it too far into the cook before it start curling and drying out. Usually 3-5 hrs is safe. Any earlier I wouldn’t advice. But it can usually be solved by getting the proper trim on the brisket. I’ll be putting up a trim video up soon

Hi, Joe!!! You're great!! I want to cook brisket and ribs for family, l have seen your video and i have question, what is in the spray bottle? And what do pour on the ribs when you wrap them into paper?

Its apple cider vinegar. Ribs dont go in paper, they go in foil.

the bottle is just apple cider vinegar. pork ribs we use foil. brisket and beef ribs we'll use paper. thanks for watching!

We really pull briskets based off temp. We do it by feel. It’s hard to say.

When you are unwrapping the briskets and feeling them before you re-wrap what are you feeling for? Fat render/jiggle?

@@knoxavebbq Which is your favorite, foil or pink butcher paper. I think foil lets brisket, for example, turn pot-roasty. Others seem to like it just fine.

To to prevent those corners from getting too crispy when they curl up. Not always necessary, but we did it anyway. Haha. Thanks for watching!
