A traditional Margherita pizza does not have tomatoes on it. Instead they will use a passata or sauce. The sauce usually consists of tomatoes, basil (usually left whole to impart flavor but be easy to remove), extra-virgin olive oil, and salt. Some traditional pizzerias will also have other variations to the sauce to make it their own of which usually in varying quantities are the following: onion alone or part of a sofrito/mirepoix, garlic not traditional but adds a nice tone especially if caramelized in the EVOO as preparing the sauce, oregano usually very little just to help boost some of the milder flavors within basil without using so much as the hard flavors would overpower the sauce, hard rinds of non-waxed cheese such pecorino or parmigiano to impart a savory flavors and aromas unique to such washed rind, aged cheeses, and the last I know of being commonly used would be a small touch of white or black peppercorns sometimes left whole to be strained out but impart flavor or simply ground into the EVOO in the sauté step to impart the oil soluble flavors into it and the water soluble in the simmering.
Crazy. I've eaten there a ton of times. Used to have band practice right down the street. Not sure if it's changed as I haven't been there in the past year. But the taco place is amazing.

Hey next time your in NY come to Albany and go get you a chicken curry ramen from tanpopo with the rice nodules, I advise having it in the restaurant cuz I feel it's a better taste experience
I go here all the time. Okeechobee road: Head to downtown, hang a right at the rail road tracks. Another right at the bridge and it’s in that industrial area. The food is SO GOOD there. They also have events, like live music and yoga on certain days. Very hipster lol.
Wow but judging from the comments, it makes you realize how expensive everything is here. I live here so I’m used to it. But yea, kind of crazy how that’s the norm.
