When I chop vegetables, I put the ends and scraps that I’m not going to use in a bag in the freezer. When the bag is full I use them to make vegetable broth. It’s wonderful in soups and I even use it to cook my rice in.

I keep a freezer bowl of cherry tomatoes all the time. Since, I’m the only one eating plant based, it takes a while before I make roasted veggies. I save up the tomatoes in my freezer bowl when I don’t use all of them for salads and just add them frozen to my tray of veggies to roast. Works great! I also save my kale stems when they are small and more tender, chop them, freeze them, and add them to my hummus. They don’t add any flavor, but it makes it a pretty green and adds nutrients.

Thanks for all the helpful tips! They help keep me motivated and I’m tired of wasting food. My sister-in-law loves cilantro and she’ll put it in a mason jar and freeze it. When she needs some she’ll take out some and quickly smack it on a cutting board holding onto the stems. It will destem them and shatter the leaves so minimal or no chopping.

That sounds great. Only I would think a lg. ziplock would be less space and just as good. Im going to try freezing it, as that is one thing I often lose.

I use the large microfiber towels from Sam’s Club to wrap up washed cilantro. After a few days I’ll check to see how their doing and re-wrap them up in a clean dry cloth. I buy 3 bunches at a time and I’ve been able to keep them for a couple of weeks! I use at least a cup of fresh cilantro in Medical Medium’s heavy metal detox smoothie daily. If I buy a container of pre-washed spinach, I’ll line the container with the microfiber towel, put the spinach in and the cover with another towel to keep spinach fresh for weeks!

I always freeze onions in a freezer bag, but never thought to freeze cut up bell peppers. I love the two in my burrito bowl, so thanks for the great tip.

I chop or dice peppers and freeze on a pan, then add to a freezer bag. Makes it easy to take amount I need for my recipe.

Great tips. I've done some of them already. But dicing up celery and onions is one I hadn't thought of, but will start doing. I think I'll cut up just one celery stalk and measure it right away in a measuring cup to see what the yield is, and make a note. Because if the recipe calls for 2 stalks, and I diced up all the stalks, it will help to know the yield. Then I'll know how much to scoop out. Same with the onions; I'll dice up a medium onion and measure it out in a cup and see what the yield is, so I know if a medium onion is 1 cup or 1 1/2 cups. Hmmm, maybe someone already did that somewhere on-line; I'll check. Thanks Tami for the great hacks.

I use the containers from Spring Mix to store my salad in the refrigerator. In the Spring, I use them to start garden seedlings.

Congratulations 🎉 Great tip on freezing the aquafaba. I always save mine, but sometimes forget, and it gets pushed to the back of the fridge... BOY does a little container really stink up your fridge if you forget about it 😆I'll freeze it from now on. Thanks

Great video, great tips. Here in the UK we can buy tomato purée (paste) in a tube. This means you only use what you need, and it keeps for ages. Also, if you want, you can mix up a little tomato powder with some water to make an instant tomato paste! That stuff is really useful. I have stopped buying mixed bags of salad leaves because they are expensive, and also I saw something pretty scary on TV about them - you sometimes find a bit of liquid at the bottom of the bag, and they analysed this and found it to be quite contaminated by bacteria! I now buy whole lettuces and a bag of baby spinach, and also a bag of rocket (can’t remember what you call that in the US but it looks a bit like dandelion leaves and has a peppery flavour). That’s the basis for my green salads these days. I have a Veggie Bullet which makes short work of finely shredding cabbage, carrots etc for a finely chopped salad. Today I made 2 huuuuuge bags - far more than I intended - so we will probably be eating salad till it comes out of our ears for the rest of the week!!

Thank you soooo much Tami and Tom, such great ideas, I'm in the processes of trying to use up peaches in my spare freezer, my husband froze about 25-30 bags of chopped peaches from our peach tree, but, I love bell peppers to such a great idea, thanks for sharing!

Do you have plans to format your recipes for easy printing? I followed the link to the no oil hummus recipe but it didn’t have a print recipe option.

Just select the recipe part (like you are going to copy and paste), and on a Windows-based computer, push Control + P, and when the print preview comes up, make sure you look for the option of 'Selection Only' -- it may be hidden under 'more settings'. That will print JUST the recipe. I clicked on the Header option so it lists the webpage I got the recipe from.

how long do the peppers, onions, etc. last in the freezer?

That all depends on how you package them. If they are air tight by using a food saver machine that sucks out all the air you should be able to keep them a couple months. If just in ziplock bags maybe a month.

Hi Tammy and Tom My fresh cilantro always goes bad I keep it in water in a mason jar and I put it in the refrigerator it still goes limp i don't use foil i read it is not healthy for you so how would i keep it fresh?

hi Tami. wash, dry and rap celery in aluminium foil, last longer. i have done this, and they last for weeks/

Another great video - thank you so much! I do have a question - do you store you cilantro in the water on the counter or in the fridge? I put cilantro in water and then inside a plastic bag in the fridge, but I am open to whatever works the best! Debbie in WA Ü

When I get it home from the store I wash it, let it air dry then wrap in a paper towel and put it in a bag for the refrigerator and if it gets limp then I will put it in a jar of water on the counter top. Yes, using the dehydrator setting, since I have a large Xcaliber dehydrator that I owned before we pruchased the Breville I haven't acctually tried it but it should work the same. if you try it out please com back to this thread and let us know how it turned out. Happy Cooking Tami

would you please post the height width and depth of the Breville. There seems to be some discrepancy online about the dimensions and I have such a tight space to consider using it in. The other thing I was hoping you could clarify is I noticed that you have the Breville in the corner without much space between the unit and the areas around it have you noticed any problem regarding the airflow. thank you I love your Channel

21.4 wide x 17.2 deep (includes the 2 inches that the door handle sticks out in front of the unit, the body is closerr to 15 inches deep) x 12.8 inches tall. Our counter area is 1//2 inch thick marble on the left side and back of the unit so we have it sitting quite close to them as heat is not an issue there. There is a small vent on the left side where it pulls in some cooling air for the electronics, we left 4 to 6 inches of space there so there is plenty of air flow. we have over 6 inches of space above and have not had any issues with two much heat. hope this helps Tami
