Ingredients:
TURKEY NECKS, AS MANY AS YOU WANT
1 PIECE SALT BEEF, CHOPPED in small pieces ( soak over night in cold water)
4 CARROTS, peeled and chopped
1 TURNIP/rutabaga, peeled and chopped
1 PARSNIP, peeled and chopped
3 POTATOES, peeled and chopped
3 Sticks of celery, chopped
1 Medium onion, peeled and chopped
1 Can tomato soup, rinse can with broth or water.
¼ Cup rice
1 Tsp pepper or more
1 Tbsp thyme, fresh or ground
Method:
Soak salt beef over night in a bowl of cold water, In a large boiler start the boiling on your turkey necks half full of water or stock/broth.
Drain water off salt beef, then add beef to boiler with turkey necks and pepper, cook for 20 to 30 minutes on a medium heat, covered. Stirring occasionally and removing any foam from the top of the boiler and tossing.
Chop all your vegetables in small pieces then add to boiler with turkey necks and salted beef, cook for another 20 minutes.
The last 10 minutes of cooking your soup add rice and tomato soup, if you don’t like tomato soup leave it out. Continue cooking for another 10 minutes and your soup is ready.
Serve with fresh rolls or sandwiches.
Bonita’s Tips:
Please note, if you don't use salt beef use 1 tbsp sea salt to seasoned and salt the soup. You can use a ham bone or pieces of ham if us don't use sea salt because ham is salty.
Rinsing tomato soup can gets all the soup to use, no waste.
