Zeytinyağlı Taze Fasulye, also known as Turkish-style Green Beans in Olive Oil, is an iconic Turkish summer dish, . With tender green beans, simmered to perfection in a flavorful blend of olive oil, tomatoes, onions and garlic, this dish is probably the favorite summer dish of many Turkish people.

Ingredients:
• 1 kg green beans, romano or string beans
• 750 g fresh summer tomatoes or good quality canned tomatoes
• 750 g onions, 3 medium size
• 5 - 6 cloves of garlic
• 1/2 cup extra virgin olive oil
• 1 tbsp sugar
• 2 tsp salt
• 1/2 cup water, optional if the tomatoes are not juicy
Instructions:
1. Wash and trim the ends and peel the sides to remove the strings if any
2. Break or cut the beans into 10 cm / 3 inch long pieces
3. Roughly chop the tomatoes and set aside
4. Peel and finely chop the onions and cut the garlics into thick slices and set aside
5. Heat the olive oil in a large pan and add the chopped onions
6. Stir and cook over medium heat for 5 mins until the onions are soft
7. Add the sliced garlics, stir and cook for another 2 mins until fragrant
8. Add the green beans, cook and gently stirring occasionally for 10 - 15 mins until the beans turn pale in color
9. Add 2 tsp salt, 1 tbsp sugar, chopped tomatoes
10. Optionally add 1/2 cup water depending on the juiciness of the tomatoes
11. Switch to lowest heat, cover and cook 1 hour
12. Check occasionally and stir to avoid burning the bottom, add water if necessary
13. Cook until the beans are fully cooked and almost no water remains in the pan
14. Remove from the heat, let it rest and cool down to room temperature for at least 15 mins
15. Serve at room temperature or chilled and enjoy.

Can I just say that Turkish vegetarian food is so so underrated!!!! I used to eat at the local restaurant there called 'Balkan lokantasi' and all the vegetarian dishes there were to die for!! I was staying at the four seasons but I ate the lokantasi everyday!! I am so grateful that you are teaching us those recipes. Please keep the vegetarian stuff coming!!!

Same dish in Lebanon called ”loubieh bi zeit "which means beans in oil. We eat it cold during summer. Thanks for the video, you are a great cook.

In Mexico we call these "Mexican style" because it has the three colours of our flag! :) We scramble them with eggs, they're so delicious

In Bulgaria we also make them with eggs we add bacon also dill and mint it's similar to a Caucasian Armenian dish

We have identical dish in Greece but with the addition of fresh parsley and/or mint. Perfect during the summer months that the beans are in season

very much like Lebanese green bean stew (Loubia b'zeit) except mushier than Loubia. Still looks tasty. Love flat green beans. Wish I could find some locally that are fresh
