also, if you would like an easy base for your own Queso/Cheese Dip, here is a good one. there are no spices, so you will have to use your own. you may make it as spicy, or as hot (there is a difference between spicy and hot) as you like. by weight, equal parts of cheese, heavy cream (aka "whipping cream") and Cream Cheese (or Neufchatel cheese). in a heavy pot, warm the cream over a low heat. when you see a bit of steam begin to rise, add in the cubed Cream/Neufchatel cheese in small amounts. from now on, you stir almost constantly because if you don't, it could burn and be lost! then, when the Cream Cheese has just about finished melting into the cream, begin adding the grated cheese (i like super sharp cheddar) in small amounts, stirring the whole time, until all of the cheese is melted into the mix and smooth. take it off the heat and begin adding whatever you like to season it. the amounts of cream, cream cheese, and cheese i typically use are about 450g/ml each. it makes a large batch that will keep well if covered and in the fridge.

Carol ~ making guacamole is one of the quickest things to throw together. If you have access to avocados, salt & lime or lemon you have the basics for a good guacamole. Just mash the avocados with a fork till it's chunky, creamy or somewhere in between which is my favorite. Add some salt and a bit of squeezed lime/lemon to your taste and you have guacamole. Less than five minutes of your time and it's delicious! Or, you can take the flavor to another level by adding a combination of uncooked small diced tomatoes (skin on), onion, fresh cilantro leaves (coriander leaves, sometimes found in bottles in the spice section) or chinese parsley and diced jalapeno pepper. The peppers can be omitted if heat is not your thing. These ingredients make up what is called salsa fresca, pico de gallo or salsa cruda. It's delicious. You can also put this combo of ingredients in your blender on pulse, just a few quick start and stops and you have just made a great salsa to eat on any Mexican dish. Or, just to eat with tortilla chips, on scrambled eggs, omelets, etc. I live in CA, I have fifty plus years of eating in hundreds of Mexican restaurants, taquerias, at food trucks, food stands, street vendors, etc. across the state and in Mexico. I have never once seen a non-Hispanic owner, chefs, cooks, servers, bartenders or cashiers in any of them, lol. You would also be hard pressed to find a place that offered ground beef in any of their items. I love Mexican food, it's my favorite so I would certainly give Tex-Mex a go but I would have to pass on anything made with ground beef. Final oddity, never once have I seen a glass or mug of milk served in any restaurant either. Not that it's unavailable, I have just never seen anyone order it. I like spicy and extreme spicy! No need for milk. lol.
The best mole video I have seen is from Mark Wiens's channel called Oaxacan Mole Negro. That looks amazing. Don't mind the fact that they also eat locusts or grasshoppers in that video. LOL. The green enchilada sauce is made with green chiles instead of the more typical red chiles in the red sauce. Mexican food and Tex Mex food is very popular here. We have about six or seven Mexican food restaurants here in our little town of about 15,000, and most of them are very good. One of my favorite dishes is the Molcajete, which is grilled beef, chicken, shrimp, onions, peppers along with sides of fresco cheese, refried beans and Spanish rice. So good! I used to eat quite a bit of venison and I have made some good stew and hamburgers from ground venison that I ground myself. Good stuff. I have not tried moose meat yet, but one day! LOL You should show us more of the Swedish food that you like. That would be interesting to see.
Mexican food is my favorite and love the festive spirit in the restaurants! Also, its great fun if the Mariachi is around to provide extra entertainment!

Maybe consider visiting Austin, Texas when you visit the States. You can try this Tex-Mex restaurant along with the other BBQ restaurant with the dino sized rib.
I’m sure if I went to Sweden I could go to a generic Swedish chain restaurant and still be amazed by something y’all would see as so ordinary because it’s a new experience for me.
Btw first time I travelled to London in 1996 we found a good Tex Mex place called The Texas Embassy. I believe it was fairly close to Trafalgar Square. It was legit, and I think run by Americans, and had Americans on the wait staff. My travel buddy and I were feeling generous and gave the waitress an enormous tip - she was an American girl who’d spoken of saving up to to travel the continent. Have no idea if it’s still around but I did see it again later, maybe around 2009 or so.
It's salt. If there is an alcohol that will make you crazy in a fun way, it's Tequila. You take the crackers and crush them, mix them up in the chili bowl itself.
First, TexMex is a blend of Mexican and Texas food. Second, if you get something too hot (spicy) the quickest solution is sugar then milk. Third, Abuelita is amazing, Chocolate with cinnamon, and other spices. Forth, queso is a cheese sauce with spices and finely minced garlic and onion.

The spices, the chiles, the corn in the tortillas, the masa, or tostadas -- all of it is part of the experience. The restaurants are often family owned and run, with abuelas in the kitchen and grandchildren working out front. We here in Texas sometimes take all this for granted, but it is a fundamental part of our state.
Tex-Mex: Puffy tacos, nachos, breakfast taco! Breakfast Tacos are excellent! If you can get flour tortillas and some fresh jalapeños or other pepper, I can give you a real easy and delicious recipe to try. Look up pico de gallo, it’s just a spicy relish if you will, of 4 chopped up fresh vegetables. Super easy but you do need the ingredients. Traditionally it’s a chopped up fresh, not pickled pepper like jalapeño or Serrano. I don’t know what’s available in Sweden but improvise on the hot pepper if you have to. It’s really best with the fresh raw stuff. Ok, pico de gallo: chop fresh bit of tomato, onion and pepper. It’s usually made with equal parts but adjust it to your taste and heat tolerance. Also the other ingredient is cilantro which basically is a slightly spicy Mexican parsley which I’m sure you don’t have. Don’t worry about it. Do try to get a fresh pepper though. Chop veggies and mix together, that’s it! Oh, I like to drain it some so the juice doesn’t pour out of my taco. Warm FLOUR tortillas not corn, scrambled eggs and bacon! Get tortilla, add as much bacon as you can handle, add some eggs and top with a generous amount of the pico! That’s it! It may sound weird but it’s great and super popular here. I really like it because of the taste and the simplicity. Anyone with the ingredients can easily whip this together. Good luck! 😁👍🇺🇸 Welcome to TEX-MEX and breakfast tacos! Salt! Lime and salt, then you have a margarita. Queso is devine. There's beef and pork, shrimp or chicken in any of the items that have meat. BUT, I'm in Southern California so our influence is more Mexican than Tex-Mex. Just a small difference but if I'm the one cooking I can adjust it anyway I want. (when I was cooking, not so much now.). It's just really good food!
I tried mole for the first time recently. Its savory, nutty and chocolatey with a spicy ish after taste. At least the one i had. I wasnt the biggest fan of it but I had to try it once lol

Peach Margaritas are made with sugar on the rim too. Frozen Margaritas are the best. They can give you brain freeze though but a bite of Nachos or Taco chases it away. I can wait to see y'all try Tex- Mex cuisine yourselves someday.

It can be ya, in that vid they had two types of green sauce , one was roasted tomatillo salsa which is the most common served, the other looked like the Green Sauce popular in the Houston area the Ninfa green sauce , which has jalapeno, tomatillo, cilantro, avocado, garlic, and sour cream. both are great.
A siesta is def. needed after Tex-Mex. But it is pure bliss during the meal. LOL That last green sauce BTW. It is Jalapeno peppers, garlic, and oil, pureed in the blender. Very light taste with a massive kick to it. LOL I drench my breakfast burrito with it every morning, love it!
Tex-Mex food is different all over Texas, depending on what part you are in. I`m from South Texas, but have lived in, and around Houston on, an off for the last 25 years, some great food around Houston, esp in Pasadena. I`ve also eaten Mexican, and Tex-Mex all over the state, along the border, in Brownsville, out in west Texas by Odessa, north east up near Texarkana, Dallas etc. I`ve never really found decent Tex-Mex, or Mexican food north of Austin. The small local mom, an pop family dinners are the best, you can tell a good dinner, by the chips , and salsa if that`s bad the food not worth ordering, also look for construction company trucks in the parking lot.
Oh..Eldorado Cafe is one of my wife and mine favorites here in Austin which is saying something as we have tons of great Tex-Mex places here in the city. The queso is amazing there too. Yeah..the donuts are a must there too. We forgot one time..and a mistake we have never repeated. Also..Abuelita means "Grandmother" or "Granny".
Hey Recky! Sorry i am late to give a comment. July 7th was my birthday! I hope some day you and Carol will come to Texas for real Tex-Mex restaurant food like this. Recky, one thing to keep in mind is that many items can be on the spicy side but you can say you want mild or not spicy but Tex-Mex dishes can be not spicy or mild tasting but they have STRONG BOLD FLAVORS that may be new experience to the mild Swedish taste but I know Carol will love the spicy things! Good news Recky, Tex-Mex does not have any hazelnuts in it! Tex-Mex is amazing. It will make you feel like fireworks in your mouth with bold flavors not always spicy. I must say i do love a good buffet smorgasboard (spelling?)
You really need to watch their *REAL* Super Bowl snacks. Their first attempt is absolutely blasphemous that this real one is a goal. I understand you can't exactly go to London but there are some foods you can make at home. Like the queso/cheese sauce.
If you were to come here to the states Texas would be my first place. You have Tex-mex, Texas bbq, southern biscuits and gravy, seafood, steak houses, they have the most diverse menu in the south! It also a very large state so you will have to eat and run to the next place and not stay too long in one area! Great reaction and can’t wait for you to see this place in person!

I lived in Indiana for many years raising children. But moved to Texas in 2011, I always loved Mexican food. But texmex is on a whole different level. And it can be mild or flaming hot depending on your taste and likes. Enchiladas with sour cream sauce is amazing. Chips , salsa and queso cheese are usually fresh made and spot on delicious. And if you didn't notice they gave them both a glass of milk, IT stops the spice/heat immediately!! TIP FOR RECKY
Queso is a cheese dip. It's really good. You are going to want to consult the new Tex Mex book you just got. Tex Mex is going to be varying levels of hot and spicy.
Tex Mex is Americanized version of Mexican food. Usually stuff like Nachos which were invented in U.S. Taco Bell is the most extreme example of Tex Mex

I love Enchiladas but my favorite is the shredded chicken Enchiladas iththe Mexican cheese & the green VERDE(vear-day) sauce is made from the little green tomotillos? that looks like a small tomato but it has a dry husk that has to be pealed off& It's Smokey & just has a little heat but ISN'T spicy hot with some avocado or guacamole on them & a little sour cream drizzled over it. Everyone makes their Queso(kay-so) different with or without meat but it usually always has diced red & green bell peppers & the white Mexican cheese( colors of the Mexican flag) but it usually always good. I like my quest a little thicker & not as runny. If u want to go to a few places but can't get to America they have some US restaurants chains in Europe like Taco Bell in England, some amazing Texas BBQ in Scotland, some warehouse grocery stores in England & New Zealand like Costco. We only have Sam's Club & BJ's Warehouse. We have European grocery stores like Aldi & we also have Lidel. So maybe u can travel not as far to England or Ireland, Scotland to eat & shop for those American items u want without having to go as far. We do have IKEA & their store restaurant with the famous Swedish meatballs which were very good. Then u can film for ur channel & show us things u like. Margaritas are tequila based, with salt & lime. BUT, there are sweet fruity Margaritas with sugar. And yes, Margaritas are definite with mexican food! Queso is a spiced white cheese dip. Its glorious, but not technically a Mexican thing..... its an Americanized Mexican thing. 😂❤❤
two cups of milk. 3 egg yolks no whites quarter cup of sugar mix yolks with sugar till they turn white. Then add to milk and boil while stirring constantly. You can vanilla 1/4 teaspoon or top with cinnamon. My favorite drink while growing up.
Mole, is mainly the three ingredients, pepper, chocolate, and chicken. Goodstuff !. Each family has its own recapie. I prefer the ones that also have Peanut butter. Just a Texan commenting.
Tex Mex is my favorite food! Basically, Tex Mex is a fusion of Mexican and American. It's the result of what American's do so well, they take something and make it better (by that I mean, they adjust it to the American palate). Queso is a Mexican cheese dip/sauce. Abuelita is definitely NOT the same thing as Nestle Quik, it's just made by the same company.
I like avocados but not a big fan of guacamole. Queso is a cheese dip. Our local Mexican place owned by a Mexican family uses 2 kinds of cheese and diced green chiles in their queso. Deer, elk, moose and wild hog are great. So is rabbit. Squirrel I can live without. The green sauce on the one enchilada is salsa verde made with tomatillos and cilantro. I prefer cheese enchadas covered in queso. Yes I'm a cheese fanatic. Tacos we make at home they way a lady from Mexico taught our family to make them. Super crunchy goodness. Yum.

Queso is literally the Spanish word for “Cheese”, but as commented, at Mex or Tex-Mex restaurants it’s cheese dip or sauce. Sometimes white, sometimes yellow, often spicy. I think the best cheese dip I ever had was the first, at a Mexican restaurant we’d go to when I was about 6.
TexMex is a different flavor. It’s mostly sour cream sauce, chili sauce and queso (cheese) sauce. Fajitas, tacos, quesadillas and enchiladas. It also depends on where in Texas you are.

Depends on the flavor of margarita. Lime gets salt, strawberry, mango, or watermelon get sugar OR salt. I prefer sugar for sweet fruits and salt for sour fruits.
