Hi guys to day I will be sharing my version of Ube Cheesecake Cookies

For the Cookies
2 1/2 cups plain flour
1 1/2 tsp baking powder
1/4 tsp salt
3/4 cup room temperature butter
115 g cream cheese or 4 0z
1/3 cup ube halaya
3 eggyolk
1 1/2 tsp ube extract
3-6 drop purple gel food colouring
3/4 cup white choc chips
3/4 cashews or any like you have on hand
1 cup +1 tbsp sugar

I will definitely try this. It looks yummy! Have you ever made ube scones or ube banana bread? I recently bought some from a local bakery here in Hawaii but it's so expensive. Delicious but expensive! Would you happen to know how to make/bake these? Thank you!

It looks so good, but I do not like white chocolate and it seems a bit odd to try dark chocolate. Maybe if I try one and give the rest away.

You can skip the white chocolate and just go with nut

hmmm I think the cookies need to be a bit larger like them cookies from Mrs Fields... I will use Macadamia nuts instead of cashews and flatten the dough so the outcome will be a flat cookie like a chocolate chip cookie...

Of younise Ube piwder please cook them, Inused ube powder as well but I cook them like I would cook the ube

You can but cook it first watch the lino I provided on how to do this, its importsnt to cook the powdered ube.

I would suggest for you to use Ube Halaya than the ube powder. Your cookie is more tastier.

I baked this for ten minutes as instructed and the center was wayyyyy under baked 😭I had to put it back in twice and then of course ended up a bit over cooked 😪
